1 teaspoon vanilla extract
1 cup whole wheat flour
1 cup all-purpose flour
½ cup regular oats, uncooked
½ cup dark brown sugar
¼ cup white sugar
1 teaspoon ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
1 ¼ cups chopped fresh cranberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
  • Combine applesauce, oil, orange juice, egg, and vanilla extract in a large bowl; mix well.

1 1/4 cups oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup unsweetened applesauce
1/2 cup low-fat buttermilk
1/2 cup brown sugar
2 tablespoons canola oil
1 large egg
3/4 cup dried cranberries
1/2 cup cranberry sauce

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon.
  • In a medium bowl combine applesauce, buttermilk, sugar, oil and egg. Make a well in dry ingredients and add applesauce mixture and dried cranberries.
  • Stir until just moist.
  • Fill muffin cups 2/3 full, adding a tsp of cranberry sauce in the middle of each cup.
