CRISPY COCONUT-OATMEAL COOKIES

Crispy Coconut-Oatmeal Cookies image

This recipe has oatmeal, Rice Krispies and coconut. Very crispy and yummy. I clipped it from a Southern Living magazine years ago. It's requested time and again at my house. The key to this recipe is definitely the rice krispies. Kellogs (a Michigan based co) introduced these in 1904. This recipe represents the Midwestern U.S.

THIN AND CRISPY OATMEAL RAISIN COOKIES

Thin and Crispy Oatmeal Raisin Cookies image

I tried to combine recipes to come up with a cookie that tastes like Tate's Bake Shop cookies. The published Tate's recipe on YouTube does not taste like the cookies you buy in the store in the green bag. This is the closest I've come to simulating the oatmeal raisin flavor. This is not a thick cakey cookie but a thin, crisp, lighter version.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your crisps will be.
  • Don't overmix the batter: Overmixing will make the crisps tough. Mix just until the ingredients are combined.
  • Use a non-stick skillet: This will help to prevent the crisps from sticking and burning.
  • Cook the crisps over medium heat: This will help to ensure that they cook evenly throughout.
  • Flip the crisps carefully: Use a spatula to carefully flip the crisps so that they don't break.
  • Serve the crisps warm: Oatmeal coconut thin crisps are best served warm, right out of the skillet.

Conclusion:

Oatmeal coconut thin crisps are a delicious and healthy snack that can be enjoyed by people of all ages. They are easy to make and can be tailored to your own taste preferences.
