1 cup whole wheat pastry flour (or all purpose flour)
¼ cup packed brown sugar
1 tablespoon baking powder
1 teaspoon cinnamon
½ teaspoon salt
1 cup milk
¼ cup oil
1 egg
1 teaspoon vanilla extract
1 cup oats
½ cup raisins
2 tablespoons packed brown sugar
2 tablespoons flour
1 teaspoon cinnamon
1 teaspoon oil (or melted butter)

Steps:

  • Preheat oven to 425* F. Spray a 12-cup muffin tin with baking spray and set aside.
  • In a large bowl, combine flour, sugar, baking powder, cinnamon and salt.
  • In a separate bowl, whisk milk, oil, egg and vanilla until combined.
  • Add milk mixture to flour mixture, stirring until just moistened. Gently fold in oats and raisins.
  • Divide mixture evenly among prepared muffin cups.
  • Prepare the topping, but combining brown sugar, flour, cinnamon and oil until combined. Sprinkle over the tops of the muffin batter.
  • Bake for 11-13 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven to a wire rack to cool completely.

I found this recipe in Internet several months ago and I made little changes on it until I got the perfect muffins for me. I hope you will enjoy them as well! In the preparation time I don't include the time while the oats and the sour milk are standing in the bowl (1 hour).

1 cup rolled oats
1 cup flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/3 cup butter, softened
1 egg
1 cup buttermilk or 1 cup sour milk (1 cup slightly warm milk with 1 tablespoon vinegar)
3/4-1 teaspoon salt
1/2 cup white sugar or 1/2 cup brown sugar (little bit less if the muffins are going to be topped with cinnamon sugar)
cinnamon sugar, as topping (optional)

Steps:

  • Combine oats and buttermilk or sour milk in a bowl, mix and let stand 1 hour.
  • Sift together flour, baking soda, baking powder and salt.
