1 c butter, softened
3/4 c packed brown sugar
3/4 c sugar
2 eggs
1/2 tsp each - baking powder - baking soda
pinch salt
1 tsp ground cinnamon
1 2/3 c flour

1/4 - 1/2 c raisins

  • 1. Preheat oven to 350 degree F. Lightly grease baking sheet. Beat butter with sugars in a large bowl ( I used my Kitchen Aid) until light and fluffy.

  • 3. Place 1 tablespoon rounded balls of dough on baking sheet ( if you want more uniform cookies, roll them in your hands to make a ball.) Should be about the size of a walnut.

Time 20m

Yield 24 cookies, 24 serving(s)

Number Of Ingredients 12

1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 tablespoons butter, room temperature
1/2 cup brown sugar
1 large egg
1/4 cup carrot, finely grated
1/2 teaspoon vanilla extract
2 cups whole grain oats
4 tablespoons skim milk

Steps:

  • Preheat oven to 350F and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.
  • In a large bowl, cream together the butter and sugar. Beat in the egg, followed by the carrots and vanilla. Using your hands, stir in the flour mixture and the oats until just combined, adding the milk 1 tablespoon at a time until fully combined. This will be really really sticky, don't worry!
  • Drop tablespoonfuls of the dough onto the prepared baking sheet, flattening each cookie slightly. Bake for about 8-10 minutes.
  • Let cool on sheet for 3 or 4 minutes, then transfer to a wire rack to cool completely.
  • Store in an airtight container.

Tips:

  • Use old-fashioned oats: These oats will give your cookies a chewier texture than quick-cooking oats.
  • Don't overmix the dough: Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are golden brown: The cookies should be set in the center and have a slightly crispy edge.
  • Let the cookies cool completely before frosting them: This will help the frosting set properly.

Conclusion:

These oatmeal carrot craisin cookies are a delicious and healthy snack or breakfast option. They are easy to make and can be customized to your liking. Try adding different nuts, seeds, or dried fruits to create your own unique flavor combination.
