Tips:

  • Use a combination of old-fashioned oats and quick-cooking oats for a chewy texture.
  • Chill the cookie dough for at least 30 minutes before baking to prevent the cookies from spreading too much.
  • Be sure to use a good quality caramel sauce. A homemade caramel sauce is always best, but you can also use a store-bought caramel sauce if you're short on time.
  • If you don't have any caramel sauce, you can make a quick and easy caramel sauce by melting 1/2 cup of butter in a saucepan over medium heat. Then, stir in 1 cup of brown sugar and 1/4 cup of milk. Bring the mixture to a boil, then reduce the heat to low and simmer for 5 minutes, or until the sauce has thickened.
  • Add chopped nuts, chocolate chips, or dried fruit to the cookie dough for a fun variation.

Conclusion:

These oatmeal caramel apple cookies are the perfect fall treat. They're soft, chewy, and filled with the flavors of oats, caramel, and apples. They're also easy to make, so they're a great option for busy weeknights.
