BREAKFAST OATMEAL MUFFINS

Breakfast Oatmeal Muffins image

When we were farming and raising our three children-now all grown-oatmeal was the "main course" for breakfast many mornings. Often, I'd end up with a cup or so of it left over. So I was glad when my sister-in-law, a war bride from England, asked if I'd like to give her recipe for oatmeal muffins a try! They're so nice to have with a cup of coffee if someone stops in to visit. They freeze well, too, and keep moist...I take them to our church bake sales. These days, I also have half a dozen grandchildren to make my muffins for.

APPLESAUCE OATMEAL BREAKFAST MUFFINS RECIPE - (4.3/5)

Applesauce Oatmeal Breakfast Muffins Recipe - (4.3/5) image

Provided by Foodiewife

Number Of Ingredients 16

TOPPING:
1/2 cup packed brown sugar
4 tablespoons butter
1 teaspoon cinnamon
6 tablespoons flour
1/2 cup old fashioned oatmeal
MUFFINS:
2 cup flour
2/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
Dash salt
2 eggs, beaten well
1 cup applesauce
1/2 cup canola oil
1 teaspoon vanilla

Steps:

  • Mix all topping ingredients together by rubbing with fingers, set aside. (I got a little lazy and melted the butter, as a shortcut from having to soften my rock hard butter!) In a large bowl, mix your flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together your eggs, applesauce, oil, and vanilla. Mix it well. Add applesauce mixture to flour mixture, stir till wet. With an ice cream scoop, fill each each muffin well about 2/3 full. (You an also bake as a cake, or as smaller muffins). Sprinkle topping over batter. Bake at 350°F for approximately 25 minutes.

Tips:

  • Use ripe bananas. Overripe bananas are ideal for oatmeal breakfast muffins as they are sweeter and have a more intense flavor. Plus, they add extra moisture to the muffins.
  • Mash the bananas well. This will help to ensure that the bananas are evenly distributed throughout the muffins and that they don't end up in large chunks.
  • Use rolled oats. Rolled oats are the best type of oats to use for oatmeal breakfast muffins as they provide a chewy texture and a nutty flavor.
  • Don't overmix the batter. Overmixing the batter will result in tough muffins. Mix just until the ingredients are combined.
  • Bake the muffins at a high temperature for a short amount of time. This will help to create a crispy crust and a moist interior.
  • Let the muffins cool completely before serving. This will allow the muffins to set and will make them easier to handle.

Conclusion:

Oatmeal breakfast muffins are a delicious and healthy way to start your day. They are filled with nutritious ingredients like oats, bananas, and nuts, and they are a good source of fiber, protein, and healthy fats. Plus, they are easy to make and can be customized to your liking. So next time you're looking for a quick and easy breakfast, give oatmeal breakfast muffins a try!
