PEAR AND OATMEAL CRISP

Categories     dessert

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 11

4 to 5 ripe Bartlett or Anjou pears
1/4 cup cranberries, fresh or dried
2 tablespoons sugar
1/3 cup all-purpose flour
1/3 cup rolled oats, uncooked
1/4 cup dark brown sugar
1 tablespoon granulated sugar
1/4 teaspoon cinnamon
Pinch nutmeg and salt
1/2 cup or 1 stick unsalted butter, melted
Heavy whipping cream or ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel, core, and thickly slice the pears. Toss them with the 2 tablespoons sugar and the cranberries and turn them into a deep, buttered 2-quart baking dish. The fruit should be at least 2 1/2-inches deep in the pan; add more fruit, if necessary.
  • For the topping, in a bowl, stir together the flour, oats, sugars, cinnamon, nutmeg, and salt. Drizzle in the melted butter tossing the ingredients with a fork to blend. Be careful not to over mix because you want a loose crumbly mixture, not a bound-together ball of topping. Sprinkle the topping over the pears.
  • Bake for 30 minutes, until pears are tender and topping is browned. Serve warm with heavy cream or ice cream.

SWEET BANANA ALMOND OATMEAL

Sweet Banana Almond Oatmeal image

This oatmeal is warm, sweet, and lusciously filling, and it leaves me satisfied for hours! It is also incredibly versatile. Switch out any of the ingredients for whatever you fancy. I find it works well with some vanilla extract instead of almond and topped with crunchy peanut butter and a drizzle of honey! If you like your oatmeal just a bit thicker, use a little less milk or cook for a little longer.

Yield Makes 6 servings

Number Of Ingredients 11

1/2 cup quick-cooking oats
1/2 cup (packed) golden brown sugar
3 tablespoons all-purpose flour
2 tablespoons vegetable oil
2 tablespoons sliced almonds
3 medium pears (about 18 ounces), peeled, cored, thinly sliced
3 large plums (about 10 ounces), halved, pitted, thinly sliced
2 tablespoons sugar
1 tablespoon fresh lemon juice
Pinch of ground nutmeg
Nonfat frozen yogurt (optional)

Steps:

  • Preheat oven to 350°F. Mix first 3 ingredients in bowl. Add oil; mix with fork until coarse crumbs form. Mix in almonds.
  • Combine fruit in 10-inch-diameter glass pie dish. Sprinkle sugar, lemon juice and nutmeg over. Sprinkle with oats. Bake until fruit is tender and topping is golden brown, about 35 minutes. Cool 10 minutes. Serve with frozen yogurt.

Tips:

  • Use old-fashioned rolled oats. This will give your crisps a chewy texture.
  • Don't overmix the dough. Overmixing will make the crisps tough.
  • Chill the dough for at least 30 minutes before baking. This will help the crisps hold their shape.
  • Bake the crisps until they are golden brown. This will ensure that they are crispy on the outside and chewy on the inside.
  • Let the crisps cool completely before serving. This will help them to set and become even crispier.

Conclusion:

Oatmeal almond crisps are a delicious and healthy snack or breakfast option. They are easy to make and can be customized to your liking. With a few simple ingredients, you can create a batch of crispy, chewy, and flavorful crisps that the whole family will enjoy.
