3/4 cup oat bran
1 cup brown sugar (*can also use Truvia brown sugar blend to cut the sugar and calories)
2 tsp baking soda
1 tsp baking powder
1/2 tsp sea salt
2 tsp ground cinnamon
3/4 cup milk (whole milk recommended)
2 eggs (beaten)
1 tsp vanilla extract
1/2 cup unsweetened applesauce
1 cup shredded carrots
1 cup shredded zucchini
1/2 cup raisins
1 cup chopped walnuts (*can also use pecans or almonds)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl combine flour, oat bran, ground flax seed, baking soda, baking powder, salt, cinnamon and brown sugar.
  • Add eggs, milk, vanilla and apple sauce to the flour mixture stirring until well combined.

1 ½ cups oat bran
1 ½ cups all-purpose flour
2 teaspoons baking powder

1 cup chilled applesauce

1/2 cup oat bran
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/ teaspoon cinnamon
1/2 cup butter (melted)
3/4 cup milk (I used skim)
1 egg (beaten lightly)
1/2 cup pure maple syrup
2 cup shredded zucchini

Steps:

  • Preheat oven to 350 degrees F.
  • Grease the wells of a 12 cup cupcake pan or line with cupcake liners.
  • In a large bowl combine dry ingredients: flour, baking powder, baking soda, salt, and cinnamon.
  • In a separate bowl combine wet ingredients: maple syrup, egg, milk, and melted butter.
