Time 3h10m

Yield 1 loaf, 10-12 serving(s)

Number Of Ingredients 10

1 1/2 cups water
2 1/2 teaspoons active dry yeast
2 tablespoons canola oil
3 tablespoons honey
1 1/2 cups oat bran
1 1/2 cups whole wheat flour
1 1/3 cups bread flour
1/2 cup flax seed meal
2 tablespoons vital wheat gluten
1/2 teaspoon salt

Steps:

  • Add water, yeast, canola oil and honey to the pan of the bread machine; stir to dissolve yeast. Let stand until creamy, about 10 minutes.
  • In a large bowl, stir together oat bran, whole wheat flour, bread flour, flax seed meal, wheat gluten and salt. Pour this mixture into the pan of the bread machine. Select Whole Wheat cycle; press Start.
  • After the dough has risen, remove it from the bread machine and turn it out onto a lightly floured surface. Form into a loaf shape and place in a lightly greased 9x5 inch loaf pan. Let rise until doubled, about 45 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

Tips:

  • Use ripe bananas: Overripe bananas are sweeter and add more flavor to the bread.
  • Don't overmix the batter: Overmixing can develop the gluten in the oats, resulting in a tough bread.
  • Let the bread cool completely before slicing: This will help the bread hold its shape and prevent it from crumbling.
  • Store the bread in an airtight container at room temperature: The bread will stay fresh for up to 3 days.
  • You can use different types of nuts and seeds in this recipe: Some popular options include walnuts, pecans, almonds, chia seeds, and flaxseeds.
  • If you don't have oat bran, you can use regular oats: Just grind them into a fine flour in a food processor or blender.
  • This bread is also great for making French toast or grilled cheese sandwiches: Just slice it thick and cook it in a little butter until golden brown.

Conclusion:

Oat bran health bread is a delicious and nutritious way to start your day. It's packed with fiber, protein, and healthy fats, and it's low in calories and sugar. This bread is also a good source of vitamins and minerals, including potassium, magnesium, and iron.
