Time 1h10m

Number Of Ingredients 15

1 tbsp oil
1 red onion, (cut into wedges)
1 medium aubergine ((eggplant), cut into chunky dice)
1 medium courgette ((zucchini), cut into chunky dice)
6 medium mushrooms, (quartered)
3 cloves garlic, (minced)
1 tsp dried mixed herbs ((I used an Italian-style blend))
210 g (~ 1 cup) white rice
1 litre ((~ 4 cups) vegetable stock)
3 medium tomatoes, (cut into wedges)
400 g tin cannellini beans, (drained (240g, or ~ 1 1/4 cups, when drained))
2 tbsp pesto
Black pepper
25 g (~ 1/3 cup) breadcrumbs (I used panko)
50 g (~ 1/2 cup) grated cheddar cheese

Steps:

  • Preheat the oven to 190°C (Gas Mark 5 / 375°F).
  • Add the oil to a large saucepan or oven-proof casserole dish, and add the red onion, aubergine, courgette, mushrooms, garlic and mixed herbs. Cook over a medium heat for 5 minutes, until the vegetables are fragrant and beginning to brown.
  • If you used a saucepan that's not oven-proof, transfer to an oven-safe casserole dish. Add the rice, stock, tomatoes, beans, pesto, and plenty of black pepper. Mix well to combine.
  • Add a lid to the pan (or cover tightly with foil, if you don't have a lid), and bake in the oven for around 30 minutes. The rice should be fairly soft. Stir the casserole well, then add the breadcrumbs and grated cheese to the top. Bake again, uncovered, for a further 20 minutes, or until the topping is crisped up to your liking.

NUTTY VEGETABLE RICE CASSEROLE

This sticks to the ribs! A hearty one-dish meal with comforting flavour and lots of good protein and vitamins. An excellent meal if you want something that fills you up like a meat dish, but is not a meat dish.

Categories     One Dish Meal

Time 40m

Yield 2-3 serving(s)

Number Of Ingredients 12

3/4 cup rice, uncooked
1 1/2 cups water
8 large beet leaves, chopped
3 big carrots, chopped
3 tablespoons onions, chopped
1 tablespoon fresh ginger, chopped
1 garlic clove, chopped
2 tablespoons olive oil
1/2 cup almond butter
1/2 cup milk
1 teaspoon paprika
salt and pepper, to taste

Steps:

  • Preheat oven to 375. Soak rice in water for ten minutes (in the pot you will cook it in).
  • While rice soaks, mix almond butter and milk throroughly in a small bowl. Set aside. Begin to chop carrots, onion, garlic and ginger.
  • Drain and rinse rice, and add fresh water. Bring to a boil, cover and simmer on medium-low for eight minutes.
  • While rice cooks, saute carrots, onion, garlic and ginger in a pan with olive oil until they begin to be tender. While these are cooking, stir occasionally and chop beet greens into bite-size pieces.
  • When rice is cooked, turn off heat and let stand, covered, for ten minutes.
  • While rice stands, add beet greens to vegetable saute and cook until just tender. I prefer not to overcook these so you still have a variety of textures in the casserole and it doesn't turn into a "blob".
  • When rice has stood for ten minutes, remove lid, add almond butter and milk mixture, and stir thoroughly. Add vegetable saute mixture and stir thoroughly.
  • Pour mixture (should be very thick) into a medium casserole and top with paprika and a bit of salt.
  • Cook at 375 for ten minutes, covered. Enjoy!

This was so GOOD! I had stuff left over. We are on a very tight budget, which precludes the extravagant waste of food, so I concocted this recipe in order to stick to my guns, so to speak. It was WAY good, and you can substitute your own ingredients. It is mega-versatile. Enjoy it! NOTE: You can also add pre-cooked meat to this, and season accordingly to make a one-dish meal!

Categories     One Dish Meal

Time 42m

Yield 2 -quart casserole, 6 serving(s)

Number Of Ingredients 13

1 dash cooking spray, as needed
1 cup cooked rice (cooked weight)
2 1/2 cups mixed vegetables (canned-precooked until soft but not yet tender)
1 pinch salt
1 pinch pepper, to taste
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1 teaspoon balsamic vinegar
1/3 cup breadcrumbs (left over) or 1/3 cup prepared stuffing (left over)
1/3 cup sharp cheddar cheese, shredded
2 tablespoons parmesan cheese, grated
1 pinch ground cayenne pepper
1 pinch Hungarian paprika

Steps:

  • Spray 2-quart casserole to prevent massive sticking.
  • Layer the casserole contents in exactly the order listed above.
  • Cover and bake in a 375°F oven for 35-40 minutes.

Tips:

  • Use a variety of vegetables. This will give your casserole a more complex flavor and texture. Try using a mix of root vegetables, leafy greens, and cruciferous vegetables.
  • Don't overcook the vegetables. You want them to be tender but still have a little bit of crunch.
  • Season the casserole well. Use a combination of salt, pepper, and herbs to taste.
  • Top the casserole with a crispy topping. This could be anything from a breadcrumb topping to a layer of cheese.
  • Let the casserole rest before serving. This will allow the flavors to meld together and the casserole to set.
  • Serve the casserole with a side of your favorite sauce or gravy. This will help to add extra flavor and moisture.

Conclusion:

Nutty vegetable rice casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover vegetables. With a few simple ingredients and a little bit of time, you can have a hearty and satisfying meal that the whole family will enjoy.
