1 1/2 pounds mild white fish ((I used tilapia))
1/4 cup crushed corn or rice Chex cereal
1/4 cup Parmesan cheese, (freshly grated )
3/4 cup crushed potato chips, (about 2 ounces)
1/2 teaspoon paprika
2 tablespoon butter, (melted)
1/2 cup mayonnaise, (regular or light)
2 tablespoon sweet relish
1 tablespoon white wine vinegar
1 tablespoon capers
1 teaspoon whole-ground mustard
pinch kosher salt
pinch freshly ground pepper

Steps:

  • Preheat oven to 400ºF. Spray baking sheet with cooking spray and set aside.
  • In a small bowl mix crushed cereal, Parmesan, potato chips, paprika, and melted butter. Pat fish dry and lay on prepared baking sheet. Sprinkle topping evenly over top. Bake 12-15 (depending on thickness of fish) or until fish flakes easily with fork. Serve with AMAZING tartar sauce and lemons.

3/4 cup seasoned dry bread crumb
1/3 cup finely chopped nuts, pecan is my choice
1 1/2 teaspoons lemons, zest of
1/2 cup low-fat buttermilk

Steps:

  • Preheat the oven to 400 degrees.
  • Spray baking sheet with nonstick cooking spray.
  • Mix breadcrumbs, chopped nuts and lemon zest together, and place on a large plate.

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish.

4 (4 ounce) fish fillets
cooking spray
3 tablespoons seasoned bread crumbs
3 tablespoons cornmeal
1/4 teaspoon celery salt
1/8 teaspoon ground red pepper
1 tablespoon canola oil or 1 tablespoon peanut oil
1 egg white, slightly beaten
1/2 teaspoon water
4 lemon wedges

Steps:

  • Rinse and pat each fillet dry with paper towels. Measure the thickness (thickest place) of your fish fillets.
  • Pre-heat oven to 500 degrees.
  • Stir together the bread crumbs, corn meal, celery salt, and red pepper. Add the canola oil (or peanut oil) to this mix and blend with a fork. Set aside.
  • In a small bowl, beat the water and egg white together and then brush one side of each fillet with the egg white. Dip each fillet in the bread crumb mixture on the egg white side.

This is a recipe handed down to me from a buddy who has ran a seafood restaurant on the waters of Marina Del Ray, California. I have never found a crunchier, juicier and flavorful but yet oven fried fish ever. Enjoy it, I have. To prevent overcooking, buy fish fillets at least 1 inch thick. The bread crumbs can be made up to 3 days in advance, cooled, and stored at room temperature in an airtight container.

4 large slice white bread, torn into 1-inch pieces
2 tablespoons unsalted butter, melted
2 tablespoons minced fresh parsley leaves
1 small shallot, minced (about 2 tablespoons)
1/4 cup plus 5 tablespoons unbleached all-purpose flour
2 large eggs
2 teaspoons prepared horseradish (optional)
3 tablespoons mayonnaise
1/2 teaspoon paprika
