GOOEY GOUDA PUFF-PASTRY BITES

Gooey Gouda Puff-Pastry Bites image

These cheesy and easy four-ingredient appetizers will remind you of brie baked 'en croûte'-which is the French term for anything baked in pastry. Here, the delicious handheld parcels are made from storebought puff pastry and filled with nutty Gouda cheese. Topped off with a dollop of lingonberry jam for sweetness, they'll be the first to go on the buffet table!

Time 1h

Yield Makes 24

Number Of Ingredients 5

Unbleached all-purpose flour, for dusting
1 sheet (about 14 ounces) all-butter puff pastry, thawed
2 tablespoons Dijon mustard
1/2 pound Gouda, rind removed, cut into 24 approximately 3/4-inch cubes
Lingonberry jam and freshly ground black pepper, for serving

Steps:

  • Preheat oven to 425°F. On a lightly floured surface, roll out pastry to an approximately 11-by-16-inch rectangle. Trim edges straight to a 10-by-15-inch rectangle. With the tines of a fork, prick pastry all over at 1/2-inch intervals. Cut into twenty-four 2 1/2-inch squares (a 4-by-6 grid). Press each square into the cup of a mini muffin tin. Spoon 1/4 teaspoon Dijon into bottom of each pastry shell. Refrigerate until pastry is firm, at least 15 minutes.
  • Bake until pastry cups are puffed, golden along edges, and beginning to set, about 15 minutes. Working quickly, remove from oven and press a cube of cheese into center of each pastry with the handle of a wooden spoon. (Cheese should depress pastry to reach bottom of cup.)
  • Continue baking until pastry is golden brown and cheese is melted, 8 to 10 minutes more. Let cool in tins a few minutes. Transfer to a serving tray, top with jam, and sprinkle with pepper. Serve warm.

Time 2h15m

Yield 48

Number Of Ingredients 18

2 (.25 ounce) packages active dry yeast
warm water as needed
¾ cup white sugar
½ cup shortening (such as Crisco®)
1 ½ tablespoons shortening (such as Crisco®)
½ cup butter, melted
5 egg yolks
1 egg
2 teaspoons vanilla-butternut flavoring
1 teaspoon ground nutmeg
1 teaspoon salt
8 cups all-purpose flour
2 cups warm milk
6 egg whites
8 cups chopped pecans
¾ cup white sugar
½ cup honey
1 teaspoon vanilla extract

Steps:

  • Dissolve yeast in warm water in a bowl according to package instructions. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
  • While yeast softens, combine sugar, 1/2 cup plus 1 1/2 tablespoons shortening, butter, egg yolks, egg, vanilla-butternut flavoring, nutmeg, and salt in a mixing bowl. Beat using an electric mixer until creamy and thoroughly combined.
  • Combine flour, milk, and yeast mixture in a separate bowl; mix into egg mixture until well combined and a dough forms. Set aside to rise in a warm area until doubled in size, about 1 hour.
  • Knead risen dough down gently; cut into 4 equal pieces. Set the pieces aside and let rise for an additional 20 minutes.
  • While rolls rise, beat egg whites using an electric mixer in a mixing bowl until stiff. Add pecans, sugar, honey, and vanilla extract; beat to combine.
  • Roll out each piece of dough using a lightly floured rolling pin on a lightly floured work surface, to approximately 13x18-inch rectangles, 1/4-inch thick.
  • Spread pecan mixture approximately 1/4-inch thick onto the dough. Roll up dough, beginning from the side. Place rolls 2 1/2-inches apart on a rimmed baking sheet.
  • Bake in the preheated oven until golden, about 45 minutes.

Tips:

  • Mise en Place: Before you start baking, make sure you have all of your ingredients and tools ready. This will help you stay organized and ensure that you don't miss anything.
  • Use Fresh Ingredients: The quality of your ingredients will directly affect the taste of your rolls. Whenever possible, use fresh, high-quality ingredients.
  • Don't Overmix the Dough: Overmixing the dough will make it tough. Mix it just until it comes together.
  • Let the Dough Rise Properly: The dough needs time to rise in order to develop its flavor and texture. Be patient and let it rise according to the recipe instructions.
  • Bake the Rolls Until They Are Golden Brown: The rolls are done baking when they are golden brown on top. Insert a toothpick into the center of a roll; if it comes out clean, the rolls are done.
  • Serve Warm: Nutty Gouda Rolls are best served warm, right out of the oven. You can also reheat them in a warm oven or toaster oven.

Conclusion:

Nutty Gouda Rolls are a delicious and versatile bread that can be enjoyed for breakfast, lunch, or dinner. They are perfect for sandwiches, sliders, or simply served with butter and jam.
