Tips:

  • If you don't have coconut rum, you can substitute another type of rum, such as light rum or dark rum. You can also use pineapple juice or orange juice instead of coconut milk.
  • To make the sauce ahead of time, simply whisk together the coconut milk, coconut rum, brown sugar, and cornstarch in a small saucepan. Bring to a boil over medium heat, stirring constantly. Reduce heat to low and simmer for 1 minute, or until the sauce has thickened. Remove from heat and let cool completely. The sauce can be stored in the refrigerator for up to 3 days.
  • For a crispy crust, be sure to pat the salmon fillets dry before coating them in the nut mixture. You can also use a nonstick skillet to cook the salmon, which will help prevent it from sticking.
  • Salmon is done cooking when it flakes easily with a fork. Be careful not to overcook it, as this will make it dry and tough.

Conclusion:

This nutty-crusted salmon with coconut rum sauce is a delicious and easy-to-make meal that is perfect for any occasion. The salmon is cooked to perfection and the sauce is rich and flavorful. Serve this dish with your favorite sides, such as roasted vegetables, rice, or mashed potatoes.
