Time 4h55m

Yield 16

Number Of Ingredients 12

4 cups all-purpose flour, or more as needed, divided
½ cup white sugar
1 ½ teaspoons active dry yeast
½ teaspoon salt
1 cup milk
½ cup butter
1 egg
2 (8 ounce) packages cream cheese, softened
1 cup confectioners' sugar
1 egg
1 tablespoon lemon juice
2 tablespoons milk

Steps:

  • Combine 1 cup flour, sugar, yeast, and salt in the bowl of a stand mixer.
  • Combine 1 cup milk and butter in a 2-quart saucepan over low heat; heat until very warm (120 to 130 degrees F (40 to 54 degrees C)), about 5 minutes.
  • Beat milk-butter mixture gradually into flour mixture on low speed. Increase speed to medium; beat for 2 minutes, stopping occasionally to scrape the bowl with a spatula. Beat in 1 cup flour and egg, occasionally scraping the bowl. Switch to the dough hook attachment; mix in remaining 2 cups flour until a soft dough forms.
  • Turn dough out on a lightly floured work surface. Knead until smooth and elastic, about 10 minutes. Shape into a ball. Transfer to a greased bowl. Turn over to coat top with grease. Cover and let rise in a warm place until doubled, about 1 hour.
  • Punch down dough and turn out on a lightly floured surface. Divide into 2 pieces. Place each piece in a separate bowl. Cover and refrigerate, 2 hours to overnight.
  • Combine cream cheese, confectioners' sugar, 1 egg, and lemon juice in the clean bowl of a stand mixer. Beat on low speed until evenly blended. Increase speed to medium; beat until fluffy, about 3 minutes.
  • Grease 2 baking sheets. Roll 1 piece of dough into a 12x15-inch rectangle. Transfer to a baking sheet. Repeat with remaining dough.
  • Spread cream cheese filling in a 4-inch strip down the center of each rectangle. Cut dough on both sides of the filling into 1-inch-wide strips. Fold strips alternately over the filling to create a braid. Cover braided dough and let rise in a warm, draft-free place until doubled, about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C). Brush tops of braids with 2 tablespoons milk.
  • Bake in the preheated oven until golden brown, about 20 minutes. Transfer to a wire rack to cool.

Categories     dessert

Time 1h40m

Yield 8 to 10 servings

Number Of Ingredients 17

12 tablespoons (1 1/2 sticks) unsalted butter at room temperature
1 1/2 cups granulated sugar
3 extra-large eggs at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/4 cups sour cream
2 1/2 cups cake flour (not self-rising)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/4 cup light brown sugar, packed
1/2 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon kosher salt
3 tablespoons cold unsalted butter, cut into pieces
3/4 cup chopped walnuts, optional
1/2 cup confectioners' sugar
2 tablespoons real maple syrup

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 10-inch tube pan.
  • Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for 4 to 5 minutes, until light. Add the eggs 1 at a time, then add the vanilla and sour cream. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low, add the flour mixture to the batter until just combined. Finish stirring with a spatula to be sure the batter is completely mixed.
  • For the streusel, place the brown sugar, flour, cinnamon, salt, and butter in a bowl and pinch together with your fingers until it forms a crumble. Mix in the walnuts, if desired.
  • Spoon half the batter into the pan and spread it out with a knife. Sprinkle with 3/4 cup streusel. Spoon the rest of the batter in the pan, spread it out, and scatter the remaining streusel on top. Bake for 50 to 60 minutes, until a cake tester comes out clean.
  • Let cool on a wire rack for at least 30 minutes. Carefully transfer the cake, streusel side up, onto a serving plate. Whisk the confectioners' sugar and maple syrup together, adding a few drops of water if necessary, to make the glaze runny. Drizzle as much as you like over the cake with a fork or spoon.

PAULA DEEN'S NUTTY ORANGE COFFEE CAKE

Paula Deen's Nutty Orange Coffee Cake image

I haven't made this yet, but it looked so good when Paula was making it with her sons on the Mother's Day episode, I had to post it here! It took them less than 10 minutes to put this together....

Categories     Breads

Time 50m

Yield 16 serving(s)

Number Of Ingredients 8

3/4 cup granulated sugar
1/2 cup pecans, chopped
2 teaspoons orange zest
2 (12 ounce) cans refrigerated buttermilk biscuits (10 count)
1 (8 ounce) package cream cheese
1/2 cup butter, melted
1 cup confectioners' sugar, sifted
2 tablespoons fresh orange juice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, combine the granulated sugar, pecans, and zest; set aside.
  • Score and cut the cream cheese into 20 equal pieces, approximately 3/4 teaspoons each. Separate the biscuits.
  • Place about 3/4 teaspoon cream cheese in the center of each biscuit. Fold each biscuit in half over the cheese, pressing the edges to seal.
  • Dip the biscuits in melted butter, then dredge in the granulated sugar mixture. Place the biscuits, curved-side down, in a single layer in the hollows of a lightly greased 12-cup bundt pan, spacing them evenly (do not stack). Place any remaining biscuits around the tube, filling any gaps. Drizzle any remaining butter over the biscuits, and sprinkle with any remaining sugar mixture.
  • Bake for 35 to 40 minutes, until golden brown. Immediately invert the cake onto a serving platter.
  • Combine the confectioners' sugar and orange juice, stirring well; drizzle the glaze over the warm cake. Serve warm.

Tips:

  • Room Temperature Ingredients: For optimal results, make sure your cream cheese, butter, and eggs are at room temperature before you start baking. This will ensure they blend smoothly and evenly, resulting in a light and fluffy cake.
  • Creaming Butter and Sugar: Take your time and cream the butter and sugar until they are light and fluffy. This process incorporates air into the mixture, which contributes to the cake's texture and volume.
  • Measuring Flour: To ensure accuracy, use a kitchen scale to measure your flour. If you don't have a scale, fluff the flour with a spoon before spooning it into the measuring cup and leveling it off with a knife.
  • Don't Overmix: Once you add the flour mixture to the wet ingredients, mix just until everything is combined. Overmixing can result in a tough, dense cake.
  • Filling: For a richer, more decadent filling, use full-fat cream cheese. If you prefer a tangier filling, use low-fat or fat-free cream cheese.
  • Baking Time: Keep an eye on the cake as it bakes. The toothpick test is a reliable way to check for doneness. Insert a toothpick into the center of the cake. If it comes out clean, the cake is done.

Conclusion:

This nutty cream cheese coffee cake is a delectable treat that is perfect for breakfast, brunch, or an afternoon snack. With its moist and tender crumb, nutty filling, and irresistible streusel topping, this cake is sure to be a hit with family and friends. Whether you're a seasoned baker or a novice in the kitchen, this recipe is easy to follow and yields exceptional results.
