NUTTY BROCCOLI SLAW
My daughter gave me the recipe for this delightful salad. The sweet dressing nicely coats a crisp blend of broccoli slaw mix, onions, almonds and sunflower kernels. Crushed ramen noodles provide even more crunch. It's a smash hit wherever I take it. -Dora Mae Clapsaddle, Kensington, Ohio

NUTTY RAMEN BROCCOLI SLAW
I have been making this since I got the 2001 Quick Cooking cookbook. very simple and delicious. I have made just a few changes to the recipe like not putting the ramen noodles, sunflower seeds and almonds in until served, otherwise they become soft and you want them crunchy. I hope you like it as much as we do.

Steps:
- To make dressing, combine all ingr. except raisins, Add raisins and let stand for at least 30 minutes. The flavors blend even better if allowed to stand, refrigerated, overnight. Just before serving, combine salad ingredients; toss with dressing, so that dressing lightly coats broccoli, saving any extra dressing for another use.
Tips:
- Choose fresh, vibrant broccoli: Look for broccoli with deep green florets and firm stems. Avoid broccoli with yellowing or wilted florets.
- Cut the broccoli into uniform florets: This will help them cook evenly. Cut the florets into bite-sized pieces, about 1-2 inches in size.
- Blanch the broccoli before roasting: Blanching helps to preserve the broccoli's bright green color and crisp-tender texture. To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until they are bright green and tender. Immediately transfer the broccoli to a bowl of ice water to stop the cooking process.
- Toss the broccoli with a flavorful marinade: This will help the broccoli to develop a delicious flavor as it roasts. You can use a simple marinade made with olive oil, salt, and pepper, or you can experiment with different flavor combinations, such as garlic, lemon, or herbs.
- Roast the broccoli at a high temperature: This will help to caramelize the florets and give them a slightly crispy texture. Roast the broccoli at 425 degrees Fahrenheit for 15-20 minutes, or until the florets are tender and slightly browned.
- Serve the broccoli immediately: Roasted broccoli is best served fresh out of the oven. You can garnish it with a sprinkle of Parmesan cheese, toasted nuts, or a squeeze of lemon juice.
Conclusion:
Roasted broccoli is a delicious and versatile side dish that can be enjoyed on its own or as part of a larger meal. It is a good source of vitamins, minerals, and fiber, and it is a great way to add more vegetables to your diet. With its nutty flavor and crispy texture, roasted broccoli is sure to be a hit with everyone at the table.
