1 cup mashed ripe banana (about 3 medium bananas)
1/3 cup coconut sugar
3 tablespoons unsalted butter (melted and cooled to room temperature)
2 tablespoons unsweetened almond milk (or milk of choice)
1 large egg
1 teaspoon pure vanilla extract
3/4 cup white whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon kosher salt
1/3 cup plus 2 tablespoons dark or semi-sweet chocolate chips (divided)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line an 8x8 inch baking pan with parchment paper so that the parchment overhangs two opposite sides like handles. Lightly coat with nonstick spray and set aside.

2 c all purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 c butter, softened
2/3 c sugar
2/3 c brown sugar
1 tsp vanilla extract
1 c banana, ripe and mashed (about 2 bananas)
1 egg
2 c chocolate chip morsels

Steps:

  • 1. Preheat oven to 350 degrees. Combine flour, baking powder and salt in a medium bowl. Beat butter, sugar, brown sugar and vanilla in a large bowl until creamy. Add bananas and egg to butter mixture and beat until combined. Gradually add flour mixture, beating until well combined. Stir in chocolate chips. Spread batter into a greased 9x13 (or 10x15) pan. Bake for 20-30 minutes or until wooden toothpick inserted in center comes out clean. Cool completely. 1/2 cup chopped walnuts
1/2 cup chopped pecans
