3 cups milk
1 teaspoon vanilla extract
2 (3 1/2 ounce) packages vanilla instant pudding mix
1 (8 ounce) container sour cream
5 medium ripe bananas
1 (1 lb) package peanut butter sandwich cookie
2 cups thawed extra creamy whipped topping
peanut butter sandwich cookie (optional)
dried banana pieces (optional)
fresh mint sprig (optional)

Steps:

  • Place 3 cups milk and vanilla in large bowl; add vanilla instant pudding mix. Beat with an electric mixer at medium speed 2 minutes or until thickened; let stand 5 minutes. Stir in sour cream.
  • Fill a large bowl with ice. Place bowl in ice, and let stand, stirring occasionally, 30 minutes or until mixture is thoroughly chilled.
  • Meanwhile, cut bananas into 1/4-inch slices. Break cookies into thirds.
  • Spoon half of pudding mixture into a 3-qt. bowl or pitcher. Top with bananas and cookies. Spoon remaining pudding mixture over bananas and cookies. Top with whipped topping. Cover and chill 2 to 24 hours. Garnish, if desired.

3 c milk
3 large eggs
3/4 c splenda, or sugar
1/3 c all purpose flour
2 Tbsp butter
2 tsp vanilla extract
5 large bananas, sliced
1 lb nutter butter cookies, broken into thirds
2 c whipped cream (optional)

Steps:

  • 1. For 15-20 minutes, constantly whisk together milk, eggs, splenda/sugar, and all purpose flour until thickened. Remove from heat, stir in butter and vanilla. Chill. Pudding shortcut: 1tsp vanilla, 3c milk, 2pk instant vanilla pudding. allow to set. stir in 8oz sour cream.
  • 2. Spoon 1/2 chilled pudding mixture into 3qt trifle. Top w/ cookies and bananas. Spoon remaining pudding mixture on top. Cover w/ whipped cream in desired. Optional: crush several cookies into 1c crumbles and dust over trifle.

3 large egg yolks, slightly beaten
3/4 cup sugar
1/4 teaspoon salt
1/2 cup all-purpose flour
2 tablespoons butter
2 teaspoons vanilla extract
4 medium bananas
1 (1 lb) package Nutter Butter sandwich cookies
2 cups sweetened whipped cream or frozen whipped topping (thawed)
broken Nutter Butter cookies, dried banana chips, or fresh mint sprigs

Steps:

  • In a small bowl, whisk the egg yolks. In a 2-qt. non-stick saucepan over medium heat, whisk together the first 5 ingredients. Cook, whisking constantly, about 15 minutes, or until mixture is thick. Remove from heat; stir in the butter and vanilla. Fill a large bowl or pot half full with ice. Place saucepan in ice, and let stand, stirring frequently, until mixture is thoroughly chilled. Meanwhile, cut bananas into 1/4-inch slices. Break cookies into thirds. Spoon HALF the cool pudding into a clear 3-qt. bowl. Top with bananas and cookies. Spoon remaining pudding mixture over bananas and cookies. Top with sweetened whipped cream/whipped topping. Lightly cover and chill 2 to 24 hours. Garnish top, if desired, at serving time. ((NOTE: A shortcut version can be made by using prepared vanilla instant pudding mix and Cool Whip, then proceed with assembly.))

This is a different "take" on an old time classic. I made this for a family reunion last year. Needless to say, we now have a "new" banana pudding request!

1 c confectioners' sugar
1 c cool whip
8 oz cream cheese, room temperature
1/2 c peanut butter
2 box vanilla pudding
5 bananas

Steps:

  • 1. Using a 9 x 13 dish, place "Nutter Butter" cookies in the dish lining the sides and bottom.
  • 2. Mix confectioner's sugar, Cool Whip, cream cheese, and peanut butter and spread over cookies.
  • 3. Mix 2 boxes of vanilla pudding as directed and spread over 1/2 of the cookies.
  • 4. Slice bananas and place over pudding layer, put remaining mixture on top. Top with layer of Cool Whip and crushed cookies sprinkled as a top garnish.
