Yield 8

Number Of Ingredients 4

2 ½ cups ground pecans
¼ teaspoon ground cinnamon
⅓ cup white sugar
4 tablespoons unsalted butter, melted

Steps:

  • Stir together ground nuts, cinnamon, and sugar. Mix in melted butter.
  • Press the mixture into the bottom and up the sides of a 9 inch, deep-dish style, pie pan. Chill the unbaked crust in the refrigerator for about 30 to 45 minutes.
  • Place pie crust on a cookie sheet, and position on the middle rack of a preheated 350 degree F (175 degree C) oven. Bake for 12 to 15 minutes, or until lightly browned. WATCH it carefully, as nut crusts burn easily; they DON'T have to turn black to taste burnt! Cool completely before filling.

NUT CRUST

Nut Crust image

If you have a recipe that calls for a graham-cracker crust, and you don't have the ingredients to make one or just want to try something that's not only simpler but much tastier--try this. Straight from Joy of Cooking, I found this recipe when I made Million Dollar Pie because I didn't feel like crushing graham crackers. It's simple and to die for and requires zero baking. My personal preference is pecans, but you may use walnuts or what the heck--try any nut out for size.

LEMON SABAYON TART WITH PINE-NUT CRUST

Lemon Sabayon Tart With Pine-Nut Crust image

Provided by Florence Fabricant

Categories     dessert

Time 1h

Yield 10 - 12 servings

Number Of Ingredients 8

5 ounces pine nuts
3 tablespoons, plus one cup, sugar
1 1/2 cup flour
7 ounces butter, at room temperature
5 eggs, beaten
1/2 teaspoon vanilla extract
4 egg yolks
1/2 cup fresh lemon juice

Steps:

  • Place the pine nuts with three tablespoons of sugar in a food processor and process until finely ground. Transfer to a bowl and mix with the flour. Using your fingertips or pastry blender, work in four ounces of the butter, a scant two tablespoons of the beaten eggs and the vanilla to form a soft dough. Refrigerate for 10 minutes.
  • Preheat the oven to 350 degrees. Butter and flour a 10-inch straight-sided tart pan.
  • Press the dough evenly into the pan and up its sides. Prick the bottom. Bake about 30 minutes, until the crust is golden. Remove from the oven and allow to cool.
  • Select a large metal bowl that will fit partway into a saucepan. Put about one-and-a-half inches of water into the saucepan and bring to a simmer. Put the remaining beaten eggs, the egg yolks and the remaining sugar into the bowl and beat them using a whisk or a hand-held electric mixer. As the mixture begins to warm and thicken, add about a third of the lemon juice. Continue beating constantly, adding lemon juice as the mixture heats and thickens. The mixture should thicken to about the consistency of yogurt. Beat in the remaining butter. Take care that you do not overheat the mixture or the eggs will curdle.
  • Remove the sabayon from the heat and pour it into the cooled tart shell. Preheat the broiler. Broil the tart, watching it carefully, until the top is golden brown.
  • Refrigerate for one-and-a-half to two hours, or overnight, before serving.

Yield Serves 8 to 10

Number Of Ingredients 13

1 1/3 cups salted macadamia nuts (about 7 ounces)
1 stick (1/2 cup) cold unsalted butter

  • Preheat oven to 350°F. In a baking pan toast nuts in one layer in middle of oven until golden, about 10 minutes, and cool. Finely chop 2/3 cup nuts. Coarsely chop remaining 2/3 cup nuts and reserve. Cut butter into pieces.
  • In a bowl with a pastry blender or in a food processor blend or pulse together finely chopped nuts, flour, sugar, and butter until mixture resembles coarse meal. This recipe came from "The Farmers Almanac Blue Ribbon Recipes" cookbook, used for a pumpkin pie. I used it last night to make Bev's Chocolate Chip Pie. It turned out great. It can be prebaked for a cream-filled pie, or unbaked for a pie that must go into the oven. You could use this recipe as an alternative to just about any "crumb crust". Hope you enjoy it as much as we do!

OAT-NUT PIE CRUST

Oat-Nut Pie Crust image

Another recipe from The Planet Organic Market Cookbook, this recipe is made with all organic ingredients; use organic where you can. From the recipe, "This crust is a treat unto itself and is much easier to make than a pastry pie crust."

Provided by Katzen

Categories     Dessert

Time 1h25m

Yield 1 9" pie crust

Number Of Ingredients 9

1/2 cup almonds, whole
1/2 cup walnuts or 1/2 cup pecans, whole
1 cup rolled oats
1/2 cup unbleached flour
1 pinch sea salt
3 tablespoons canola oil or 3 tablespoons butter, melted
3 tablespoons maple syrup
1 tablespoon water
1 tablespoon vanilla extract

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Bake the almonds and walnuts or pecans on separate baking sheets until they are fragrant and toasted: about 8 minutes for pecans or walnuts, 10 minutes for almonds. Remove from the oven and set aside to cool. Raise the oven temperature to 375°F.
  • 3. Grind the oats in a blender or food processor until they become a coarse meal. Empty into a large mixing bowl.
  • 4. Grind the almonds and walnuts or pecans into a coarse meal and add to the oats, along with the flour and salt.
  • 5. In a small bowl, whip together the oil or butter, maple syrup, vanilla and water. Add to the oat-nut mixture and mix well. Allow the mixture to sit for 10 minutes in the refrigerator.
  • 6. With cold, wet hands, press the crust mixture into a well- oiled tart or pie pan. Bake for 8 to 10 minutes or until barely golden brown.
  • 7. Set aside to cool. Then add pie filling and bake for additional 30 to 35 minutes.

Tips for Making the Perfect Nut Crust:

  • Choose the Right Nuts: Use a variety of nuts for a complex flavor and texture. Walnuts, pecans, almonds, and hazelnuts are all popular choices.
  • Toast the Nuts: Toasting the nuts enhances their flavor and makes them more fragrant. Toast them in a preheated oven at 350°F for 5-7 minutes, or until they are golden brown and fragrant.
  • Grind the Nuts: Grind the nuts into a fine or coarse meal, depending on your desired texture. For a finer crust, use a food processor. For a coarser crust, use a blender or mortar and pestle.
  • Stir in Flavors: Add spices, herbs, or seasonings to the nut mixture for extra flavor. Garlic powder, onion powder, paprika, and cayenne pepper are all good options.
  • Press the Crust into the Pan: Press the nut mixture firmly into the bottom and up the sides of a greased pie plate. Make sure the crust is evenly distributed and there are no cracks or gaps.
  • Chill the Crust: Chill the crust in the refrigerator for at least 30 minutes before filling. This will help to firm up the crust and prevent it from crumbling.

Conclusion:

Nut crusts are a delicious and versatile alternative to traditional pie crusts. They are easy to make and can be used for both sweet and savory pies. With a few simple tips, you can make a perfect nut crust every time. So next time you're in the mood for a pie, try making a nut crust. You won't be disappointed!
