VANILLA SPONGE CAKE- GLUTEN, DAIRY, NUT AND EGG FREE
Posting this cake for those who are looking for a cake that is gluten, dairy, egg and nut free. For allergies or food intolerances be sure to read all product labelling and be sure to buy flours that are suitable. This recipe uses a ready mixed gluten-free flour blend that has added gums for baking qualities. If you use a blend that does not have any added gums or gluten-free stabiliser then add in one teaspoon of xantahan or guar gum with the flour. I use ORGRAN brand flour and this is from one of their magazines. Orgran is gluten, dairy, nut, egg free and is vegan diet suitable. As stated - use a general purpose BLENDED gluten-free flour blend for this recipe---this recipe has not been developed for use with coconut flour or almond meal.

Steps:
- Preheat oven to 180°C Oil and line a round cake tin. (I use 20cm/8inch pan- but smaller or larger will just vary the height of the cake).
- Mix the dry ingredients together in a large bowl. Use an egg whisk to aerate- their is no need to sift the dry ingredients.
- Using a mixing jug, beat the oil, vinegar, vanilla and water together. Mix well.
- Make a well in the flour mix and add the wet mix. Beat this together slowly and when mixed through beat with a wooden spoon for a couple of minutes.
- Pour the mixture into the prepared tin.The mixture should be the consistency of a thick batter. Cook 45-60 minutes.
- When cooked, remove the cake from the oven and allow the cake to cool in the tin for 5-10 minutes before turning out to cool.
- Decorate as desired.

NUT CAKE (GLUTEN FREE)
You can make this cake with any kind of nuts, but I liked it best with pecans. Instead of gluten free flour you can also use spelt or whole wheat flour. I've tried it with all kinds of gluten free flour, and they all work well. You can also use almond meal so you get a no grain cake.

Tips:
- Measuring Ingredients Accurately: Use a kitchen scale to measure ingredients, especially for gluten-free baking. This ensures precise measurements and consistent results.
- Choosing the Right Gluten-Free Flour: Opt for a gluten-free flour blend that is specifically designed for cakes. This will provide the necessary structure and texture to the cake.
- Creaming Butter and Sugar Properly: Cream the butter and sugar together until light and fluffy. This step incorporates air into the mixture, resulting in a tender and moist cake.
- Folding in Egg Whites: When adding egg whites, fold them gently into the batter until just combined. Overmixing can deflate the egg whites and result in a dense cake.
- Baking Temperature and Time: Follow the recipe's instructions carefully for the baking temperature and time. Gluten-free cakes may require slightly longer baking times due to the absence of gluten.
- Cooling the Cake Properly: Allow the cake to cool completely before frosting or serving. This helps the cake to set properly and prevents it from crumbling.
Conclusion:
Crafting a delectable gluten-free nut cake requires careful attention to detail and precise execution. By following these tips and adhering to the recipe's instructions, you can create a moist, flavorful, and gluten-free cake that will delight your taste buds and cater to your dietary needs. Remember to measure ingredients accurately, choose the right flour blend, cream butter and sugar thoroughly, fold in egg whites gently, bake at the correct temperature and time, and allow the cake to cool completely before indulging. With a little patience and attention to detail, you can create a stunning gluten-free nut cake that will be the star of your next gathering.
