BAKED CREAMY SPINACH DIP

Baked Creamy Spinach Dip image

I'm a fan of classic dishes but frequently tweak them a bit to suit my family's tastes. My cheesy spinach dip is a little lighter than other versions I've seen and pairs well with bagel chips. -Jenn Tidwell, Fair Oaks, California

A delicious change of pace to the regular version of spinach dip. Nice and spicy -- feel free to leave out the "pickled" jalapeno if you want the dip less spicy.

Number Of Ingredients 9

2 package(s) 10-oz. pkgs. frozen chopped spinach, thawed
1/2 cup(s) onion, minced
1 pickled jalapeno, minced (optional)
8 ounce(s) cream cheese, softened
2 cup(s) monterrey jack cheese
1/3 cup(s) half and half
1 teaspoon(s) hot sauce
1 can(s) rotel tomatoes and green chilies
1 cup(s) fresh roma tomatoes, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Place thawed spinach in a hand towel and squeeze to remove excess moisture.
  • Combine spinach with the onion, jalapeno (if using), cream cheese, grated cheese, half and half, hot sauce and rotel in a bowl. Mix well and then fold in fresh tomatoes.
  • Prepare a 2 quart baking dish and spoon mixture into dish. Bake for 20-30 minutes or until bubbly.
  • Serve with tortilla chips.

Tips:

  • Use fresh spinach: Fresh spinach has a more vibrant flavor and color than frozen spinach. If you're using frozen spinach, be sure to thaw it and squeeze out all of the excess water before using it.
  • Don't overcook the spinach: Overcooked spinach will become mushy and lose its flavor. Cook it just until it's wilted, about 2 minutes.
  • Use a variety of cheeses: A combination of different cheeses will give your dip a more complex flavor. Try using a combination of cream cheese, cheddar cheese, and Parmesan cheese.
  • Add some spice: If you like spicy food, add some red pepper flakes or cayenne pepper to your dip. You can also add some chopped jalapeños or serrano peppers.
  • Serve with your favorite dippers: Serve your spinach dip with tortilla chips, crackers, bread, or vegetables. You can also use it as a spread for sandwiches or wraps.

Conclusion:

Spinach dip is a delicious and versatile appetizer that's perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy snack or appetizer, give this not-your-average baked spinach dip a try.
