3 lbs grass fed boneless beef chuck roast
1 cup pomegranate juice
10 garlic cloves, peeled and thinly sliced
6 sun-dried tomatoes, cut into thin strips width-wise
1 1/2 cups water
kosher salt
fresh ground black pepper
1 thickly sliced onion

Steps:

  • Cut slits in the roast and insert garlic and tomatoes into each. I found this went faster when I made larger slits and stuffed in a bunch or used the fat marbling and got up under it like getting spices under chicken skin. Whatever works, but prepare both sides of the meat this way.
  • Rub the roast in salt and pepper.
  • Arrange the onion slices in the bottom of the crock pot and put the roast on top.
  • Mix water and juice and pour over roast.
  • Cook on low for 7 hours or until very tender.

2 celery stalks, cut into large dice
1 medium carrot, cut into large dice
1/2 medium yellow onion, cut into large dice
2 tablespoons canola oil
1 cup panko
1/3 cup buttermilk
1/3 cup ketchup
1 tablespoon Worcestershire sauce
2 eggs
2 tablespoons chopped fresh parsley
1 tablespoon kosher salt
1 tablespoon freshly cracked black pepper
1 teaspoon cayenne pepper
2 pounds ground beef chuck
1 pound fresh ground pork
Herb Aioli, recipe follows
Spicy Hollandaise, recipe follows
1 1/2 cups Southern-style mayonnaise
1 cup olive oil
3 tablespoons chopped fresh sage
1 tablespoon chopped green onions
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme
1/2 tablespoon kosher salt
2 teaspoons freshly cracked black pepper
3 egg yolks
1 1/2 pounds (6 sticks) unsalted butter
2 cups pasteurized egg yolks
1/2 cup Louisiana-style hot sauce, such as Texas Pete
1/4 cup white wine Pinch kosher salt
Pinch pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Pulse the celery, carrots and onions in a food processor until finely chopped. Add the oil to a saute pan over medium-low heat, then add the chopped veggies and cook, covered, until translucent. Transfer the veggies to a plate and cool in the refrigerator.
  • Meanwhile, mix together the panko, buttermilk, ketchup, Worcestershire and eggs in a bowl. Add the parsley, salt, black pepper and cayenne and mix well. Once the veggies are cool, add them to the mixture and incorporate. Next add the ground beef and pork and mix thoroughly with your hands.
  • Line two loaf pans with parchment paper and divide the meatloaf mixture between them. Cover with foil and bake until the meatloaves reach an internal temperature of 165 degrees F, about 1 hour. Slice and serve immediately, or cool, slice and reheat. Serve with Herb Aioli and Spicy Hollandaise.
  • Add the mayonnaise, olive oil, sage, green onions, rosemary, thyme, salt, pepper and egg yolks to a blender or food processor and blend until smooth and well incorporated.
  • Melt the butter in small saucepan over medium heat. Blend the yolks, hot sauce, wine, salt and pepper in a blender, then drizzle in the melted butter while blending, until the sauce is smooth.

3 -4 lbs top round roast (or bottom round, brisket, or rump roast)
1 teaspoon minced garlic
1 teaspoon salt
1/2 teaspoon ground black pepper
1 -2 large onion, thinly sliced
2 (7 ounce) cans diced mild green chilies (optional)

Steps:

  • Put sliced onions into the bottom of the crock pot.
  • Place trimmed meat into crock pot. Top with minced garlic, salt, pepper, and the green chilies (if using, see variations below).
  • Cover and cook on low 10 to 12 hours (high 5 to 6 hours), or until meat is tender and flakes easily with a fork, and onions are golden and caramelized. Please note that cook times may vary with different crock pot models.
  • Remove beef to a cutting board or pan. At this stage you may slice meat in the traditional fashion and serve with mashed potatoes, gravy and vegetables for a traditional sit-down roast beef dinner, -or- shred the meat for sandwiches (see below). Shred meat using two forks, then use a slotted spoon to scoop out caramelized onions (and chiles, if using) and stir into the shredded beef mixture.
  • Reserve some of the stock for au jus dipping, if desired. The remaining stock makes a great gravy (thicken with a little flour or cornstarch), or soup base, or save for another use.

  • Italian Sandwiches:.
  • Use a 10 ounce jar of peperoncinis (undrained) and a 1-ounce packet Good Seasons Italian seasonings in place of the green chiles & seasonings; serve with a slice of provolone on French or Italian mini-rolls.

  • Substitute about 2 cups barbecue sauce for the mild green chilies; serve on buttered mini-rolls.

Hello! I thought I would share my mom's recipe that I've known my whole life. and I'll be honest... you won't see Onion in the pictures because I forgot to buy them... but they are supposed to be there :)

1 beef roast
1 onion
4 carrots
4 celery ribs
1 small red potatoes (multiple)
1 dry onion soup mix, package
2 tablespoons garlic powder
2 tablespoons minced onions
1 cup water
2 tablespoons cornstarch
1 salt & pepper

Steps:

  • Season your Roast with Salt & Pepper, then place in the Crock Pot.
  • Pour Dry Onion Soup over top the roast.
  • Dice up your Veggies (Carrots, Celery, Onion, Potatoes) and add them to the Crock Pot surrounding the roast. (I like to add the potatoes last).
  • Add the Garlic Powder and Minced Onion to the top, then add the water.
  • Cook on Low for 8 hours.
  • Remove the Roast and Veggies from the crock pot and place on a separate dish, then take a heat proof cup or measuring cup and scoop some of the liquid from the Crock pot and mix it with the cornstarch until well mixed. Then add to the rest of the crock pot and wisk to thicken into a nice gravy.
  • Serve and Enjoy the super simple meal.
