1 1/2 sticks butter
1/2 cup finely chopped sweet onion
1/2 cup finely chopped celery
3 cloves garlic, smashed
Pinch white pepper
1 cup all-purpose flour
1 bottle clam juice
1 quart half-and-half
3 tablespoons sweet cream sherry
1 pound crabmeat
Seafood seasoning (recommended: Old Bay)
1 cup whole milk, if needed
1/2 cup masago (smelt roe)
Nutmeg
Crostini

Steps:

  • Melt the butter in large saucepan over low heat. Add the onion, celery and garlic and saute until the onions become translucent, about 4 to 5 minutes. Add freshly cracked white pepper and stir in the flour to make a light roux. Set the roux aside.
  • In another saucepan, over low heat, combine the clam juice and the half-and-half. Heat slowly until the mixture almost comes to a simmer.
  • Slowly whisk the clam juice mixture into the roux. Stir in the sherry and fold in the crabmeat. Add seafood seasoning, to taste. Slowly reheat the sauce. (DO NOT BOIL!) If necessary, add milk to desired consistency. This should be a thick soup, so go slow with the milk.
  • Ladle the soup into small serving bowls and top each with a dollop of masago. Grate fresh nutmeg on top and serve with crostini.

1 1/4 pounds extra-sweet grape tomatoes, divided
1/2 cup olive oil
2 small sweet banana peppers, seeded and quartered
1 teaspoon sea salt
1 cup chopped red onion
1 teaspoon natural brown sugar
3/4 teaspoon crushed red pepper flakes
1 1/2 teaspoons coarsely ground black pepper, divided
1 cup chopped fresh cilantro leaves
2/3 cup chicken broth
12 ounces vegetable juice (recommended: V-8)
1 egg
1 small lemon, juiced (about 1/4 cup)
2/3 cup plus 2 tablespoons heavy whipping cream
6 tablespoons sweet cream salted butter
1 clove garlic, finely chopped
1/8 teaspoon crab boil seasoning (recommended: Old Bay)
2/3 cup high-quality cream sherry (sweet)
1/2 teaspoon crab base
1 cup fresh lump blue crabmeat (steamed or boiled)
1/2 cup good quality grated Parmesan
2 teaspoons red lump fish caviar, rinsed and strained

Steps:

  • Preheat oven to 440 degrees F.
  • Halve 18 of the grape tomatoes. In a baking dish pour in 1/4 cup olive oil. To that add banana peppers, and 1/2 of the tomatoes. Mix to coat all with oil. Sprinkle with 1/4 teaspoon sea salt and 1/4 teaspoon pepper. Bake uncovered (ideally in convection oven) until they start to brown (about 15 minutes).
  • In a pot heat 1/4 cup olive oil and add 1/3 cup finely chopped red onion, 1/4 teaspoon sea salt, natural brown sugar, 1/4 teaspoon crushed red pepper, 1/4 teaspoon course ground black pepper. Stir over high heat. Add the remaining whole tomatoes and continue to mix until the tomato skins start to peal (about 4 minutes). Pour entire contents of this pot into a blender. To this add cilantro, the roasted tomato mixture and chicken broth. Blend until fairly smooth (about 15 to 20 seconds).
  • Pour entire contents into pot, add 6 ounces of vegetable juice, bring almost to a boil and reduce to a simmer.
  • In a medium mixing bowl beat egg until it produces a light foam and beat in the lemon juice. To this add the remaining 6 ounces vegetable juice and beat again. Slowly mix in 1 cup of the hot soup. Take soup off the heat and slowly mix this mixture into the soup. Add 2 tablespoons heavy cream and stir over medium heat until it starts to bubble. Remove from heat.
  • In a skillet add 6 tablespoons butter, melt butter over medium heat, add 2/3 cup of finely chopped red onion and garlic. Saute for about a minute and then add 1/2 teaspoon crushed red pepper and 1/2 teaspoon coarsely ground black pepper. Continue sauteing until the onions are soft and translucent. Then add crab boil seasoning and cream sherry. Turn heat up until mixture comes to a bubble then lower to medium heat and stir until it starts thickening to almost a light syrup consistency. Once it has thickened add crab base and make sure it is incorporated well. Then add 2/3 cup heavy whipping cream stir over medium to high heat until it starts to bubble. Then add 1 cup of crabmeat and mix well, once it comes to a bubble again remove from heat.
  • For each serving:
  • Add 1/2 cup of the tomato soup to bowl, to this add 2/3 cup of the crab soup, 1 tablespoon freshly grated Parmesan. And 1/4 teaspoon of the red lump fish caviar and mix well. Float a tablespoon of the crab soup in center
  • Grate some more Parmesan on top. Add freshly ground black pepper, to taste, and serve
  • I like to garnish with blue crab claws sauteed in butter and cream sherry and or some caviar. When in season I like to use fresh crab roe.

1 stick (8 tablespoons) unsalted butter
1 medium onion, diced
1 stalk celery, diced
1/3 cup all-purpose flour
1 teaspoon seafood seasoning
1/4 teaspoon grated nutmeg
1 bay leaf
Freshly cracked black pepper
1/3 cup dry sherry
1/3 cup clam juice
3 cups seafood stock
1/2 cup crab roe, plus a little more for garnish, optional
2 cups heavy cream, at room temperature
1 teaspoon Worcestershire sauce
Kosher salt
1 pound lump blue crabmeat

Steps:

  • In a large pot or Dutch oven, melt the butter over medium heat. Add the onion and celery and cook, stirring occasionally, until the onion is soft and translucent, about 10 minutes.
  • Reduce the heat to medium low, whisk in the flour and continue to cook, stirring constantly. You are essentially making a roux without browning it. Stir in the seafood seasoning, nutmeg, bay leaf and pepper, then whisk in the sherry and clam juice. Increase the heat to medium and bring to a simmer. Cook, stirring frequently, until very thick, about 10 minutes. Stir in the seafood stock and crab roe, if using, bring to a simmer and cook for 15 minutes.
  • Add the heavy cream and Worcestershire, return to a simmer and cook until thickened and reduced slightly, another 15 minutes. Remove the bay leaf, then puree the soup with an immersion blender until smooth (or use a regular blender; let cool slightly first, and use caution when blending hot liquids). Season with salt. Stir in the crabmeat and garnish with crab roe if desired.

1 onion, finely diced
1 bay leaf

2 cups White Crab Stock, recipe follows
2 cups milk
1 cup cream
2 teaspoons paprika
1 pound cooked Atlantic Blue crab meat, divided
1/2 cup crab roe, divided
Salt and pepper, to taste
1/4 cup sherry
2 tablespoons chopped chives
French bread
2 quarts cold water
1 onion, peeled and halved
1 garlic bulb, halved
1 turnip, split
2 celery stalks, split
Bouquet garni (4 sprigs fresh parsley, 4 sprigs fresh thyme, 2 bay leaves and 1 leek -- tied together with string)
1/2 lemon, juice
1 teaspoon crab boil seasoning
1/2 teaspoon whole white peppercorns
1/2 cup white wine
Sea salt, to taste
6 live Atlantic Blue crabs

Steps:

  • Melt butter in a stockpot over medium heat. Add the onion and bay leaf, sweat down for 2 minutes until translucent. Sprinkle in the flour and stir until it dissolves. Whisk in the stock, stirring constantly until smooth and free of lumps. Gradually pour in the milk, cream, and paprika; continue to stir until incorporated. Add half the crab meat and roe. Season with salt and pepper. Cook for 15 minutes until thick and heated through.
  • To serve, divide a tablespoon of sherry among 4 bowls. Ladle the soup into the bowls, spooning the remaining crab meat and roe in the center of each. Garnish with chopped chives. Serve with crusty French bread.
  • Pour water in a large stockpot and place over low-medium flame. Add the vegetables and bouquet garni; cook for 5 minutes until the vegetables begin to become tender. Add the lemon juice, crab boil seasoning, peppercorns, wine and salt. Simmer gently for 15 minutes, stirring to mingle flavors. Carefully put the crabs in the pot and continue to cook for another 15 minutes. The crab shells will be bright orange when done. Remove and shell the crabs. Strain the stock to discard the vegetable solids, reserving the crab meat and stock.

5 tablespoons all-purpose flour
1 small white onion, grated
1 stalk celery, grated
2 cloves garlic, minced
salt and pepper to taste
2 quarts half-and-half cream
1 pint heavy cream
1 cup chicken broth
1 teaspoon hot pepper sauce
2 teaspoons Worcestershire sauce
2 tablespoons chopped fresh dill
1 pound lump crabmeat
2 tablespoons chopped fresh chives
½ cup sherry wine

Steps:

  • Melt butter in a large stockpot over medium heat. Stir in flour to make a smooth paste, and cook for about 3 minutes, stirring constantly. Mix in the onion, celery, and garlic; season with salt and pepper. Continue to cook and stir for about 4 minutes.
  • Gradually whisk in the half and half cream so that no lumps form. Stir in chicken broth and heavy cream. Bring to a simmer, and pour in half of the sherry. Season with dill, Worcestershire sauce and hot sauce. Cover, and simmer for about 30 minutes, until soup has reduced by 1/3. Add crabmeat, and simmer for another 10 minutes.
  • Ladle soup into bowls, and top off with a splash of the remaining sherry and a sprinkle of fresh chives.

1 ½ tablespoons margarine
2 teaspoons all-purpose flour
1 ½ teaspoons margarine
1 quart whole milk
1 pound crabmeat, flaked
4 ounces crab roe
⅛ teaspoon ground white pepper
⅛ teaspoon ground mace
2 cups milk
½ cup dry sherry

Steps:

  • Using a saute pan melt 1 1/2 tablespoons butter, over low heat, and saute onions.
  • Using a double broiler melt 1 1/2 tablespoons of butter. Add flour and stir until well blended.
  • Combine sauteed onions and flour mixture into a large stock pot. Add 1 quart whole milk and stir constantly until soup is well blended.
  • Add the crab meat and roe and stir well; add pepper and mace and cook slowly for 20 minutes. Add 1 pint of milk and stir.
  • Remove from heat and add wine.
  • Serve in soup bowls which have been heated and garnish with sour cream, parsley sprigs or a sprinkle of paprika.

1 tablespoon minced garlic

1 quart crab or lobster stock
3 quarts heavy cream
2 tablespoons crab boil seasoning (recommended: Old Bay)
2 ounces crab roe, or sea urchin roe (uni)
1/4 cup minced fresh parsley
2 pounds crab meat

Steps:

  • In heavy saucepan or stock pot over medium-high heat, add 3/4 pound butter, carrots, celery, onions, and garlic and cook until the vegetables have begun to brown, 10 to 12 minutes. Deglaze with the sherry, and stir and scrape up any bits. Once deglazed, add the flour and stir into the butter to create a roux. Once well mixed, add the stock and cream, reduce the heat to medium-low, and cook for 25 minutes, stirring throughout to ensure the soup does not scorch.
  • Pulse the soup with a hand mixer to mince the vegetables. Add the crab boil seasoning, crab roe, and parsley and continue to cook for 10 minutes. Remove the soup from heat, whisk in the remaining 1/4 pound butter, and stir in the crab meat.
