Time 50m

Number Of Ingredients 8

1/4 cup olive oil
Juice of 1 lemon ((about 1/4 cup lemon juice))
2 tsp dried oregano (preferably Greek, or 1/2 cup chopped fresh)
4 cloves garlic (minced)
1 tsp salt
1/2 tsp freshly ground black pepper
8 lamb chops
1 tbsp olive oil (for cooking)

Steps:

  • Using paper towels, pat dry chops and discard any shards or bone fragments.
  • Mix all of the ingredients together in a small jug or bowl.
  • Arrange lamb chops in a large baking dish or on a large plate, and pour the marinade all over the lamb, rubbing it into the meat. Cover with plastic wrap and marinate for half an hour, or for a deeper flavour, marinate overnight in the refrigerator, turning the chops from time to time (before cooking, let lamb chops sit at room temp 30 minutes).
  • Heat oil in a pan (cast iron preferably or grill plates) over high heat until just starting to smoke. Fry or grill lamb in 2 batches for 3-4 minutes each side, depending on thickness until done to your liking. (Usually, at 3 minutes per side they are medium, and at 4 minutes they are medium-well.)
  • Let rest for 5 minutes before serving.Sprinkle with a little extra dried oregano for added flavour and a little extra lemon juice (optional).

NOSTIMINI LAMB CHOPS

Nostimini Lamb Chops image

Nostimini is a Greek herb mix introduced to me by Kookaburra and this recipe is inspired by an idea she gave me on how to use it. She suggested overnight marination but that was just too long for me to take so I've posted as I cooked it and it was wonderful, but overnight marination would be worth a try if you plan in advance. Note the preparation time does not include marination time.

Time 30m

Yield 4 servings

Number Of Ingredients 6

12 rib or loin lamb chops (about 2 1/2 pounds total); have the butcher ''French'' the rib chops (trim and scrape the top portions of the bones clean)
1/4 cup coarsely chopped rosemary
4 cloves garlic, peeled and crushed with the side of a knife
Extra-virgin olive oil, for sprinkling
Coarse sea salt or kosher salt
Freshly ground black pepper

Steps:

  • In the morning, get out a large bowl or dish. In it, combine the lamb chops with the rosemary and garlic. Sprinkle enough olive oil over the chops to coat them lightly. Toss to coat, then cover with plastic wrap and refrigerate until an hour before dinner, giving them a stir every few hours.
  • An hour before serving, set out the chops to bring them to room temperature. Preheat a grill to medium high or a broiler. Season the chops with salt and pepper. Grill for 2 to 3 minutes on each side, turning them just once, so that they are nicely browned on the edges but still quite pink inside. Pile onto a warm serving platter and set on the table.

Tips:

  • Choose high-quality lamb chops: Look for chops that are evenly marbled and have a bright red color. Avoid chops that are excessively fatty or have a dull color.
  • Marinate the lamb chops: Marinating the chops in a flavorful mixture of herbs, spices, and oil helps tenderize them and enhance their flavor. Common marinade ingredients include olive oil, garlic, rosemary, thyme, and lemon juice.
  • Cook the lamb chops over high heat: This helps create a flavorful crust on the outside while keeping the inside tender and juicy. You can cook the chops in a grill pan, skillet, or on an outdoor grill.
  • Use a meat thermometer to ensure proper doneness: The ideal internal temperature for lamb chops is 135°F (57°C) for medium-rare, 145°F (63°C) for medium, and 155°F (68°C) for medium-well.
  • Let the lamb chops rest before serving: This allows the juices to redistribute throughout the meat, resulting in more tender and flavorful chops. Let the chops rest for 5-10 minutes before slicing and serving.

Conclusion:

Nostмимо lamb chops are a delicious and versatile dish that can be enjoyed in a variety of settings. Whether you're grilling them outdoors or cooking them in a skillet, these tender and flavorful chops are sure to impress your friends and family. With careful preparation and cooking, you can create a restaurant-quality meal in your own home.
