NORWEGIAN PARSLEY POTATOES

Norwegian Parsley Potatoes image

This simple recipe is precisely how my Norwegian born BIL taught my sister to make parsley potatoes. He insists that the potatoes do not taste as good if the salt is not cooked with the potatoes. Once I cooked the potatoes for my sister and didn't put the salt in the water first. He had a fit and wouldn't eat them after taking one bite and asking me if I had salted them before cooking.

OVEN BAKED PARSLEY RED POTATOES

Oven Baked Parsley Red Potatoes image

This is a recipe that my grandmother made ever since I can remember (I'm 58). I bake the potatoes like she did and serve them with pork or chicken. It's a favorite of my father-in-law who always asks for them when he comes for dinner.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place butter in a large baking dish and melt in preheating oven.

Tips:

  • Use fresh parsley. Fresh parsley has the best flavor and will give your potatoes the most vibrant green color. If you don't have fresh parsley, you can use dried parsley, but the flavor will be less intense.
  • Don't overcook the potatoes. Potatoes are best when they are cooked through but still have a little bit of bite to them. Overcooked potatoes will be mushy and less flavorful.
  • Serve the potatoes immediately. Parsley potatoes are best served hot and fresh out of the oven. They can be reheated, but they will not be as good as when they are first made.
  • Experiment with different herbs and spices. Parsley potatoes are a great canvas for experimentation. Try adding other herbs, such as thyme, rosemary, or oregano, to the potatoes for a different flavor profile. You can also add spices, such as garlic powder, onion powder, or paprika, to taste.

Conclusion:

Parsley potatoes are a classic side dish that is easy to make and always a crowd-pleaser. They are perfect for any occasion, from casual weeknight dinners to holiday feasts. With a few simple tips, you can make the best parsley potatoes every time.
