Steps:
- For the pudding: Heat the milk, cream and sugar in a medium saucepan over medium-low heat. Heat until just barely simmering, then remove from the heat.
- Meanwhile, melt the 10 tablespoons butter in a medium pot. Sprinkle the flour evenly over the butter and cook, whisking constantly, until the mixture browns lightly and smells nutty, 3 to 4 minutes.
- Gradually ladle the warm milk mixture into the pot, whisking constantly, until incorporated and the mixture comes to a visible simmer and thickens, 3 to 4 minutes.
- Remove from the heat and stir in the vanilla extract.
- For the spiced sugar: Combine the sugar, cinnamon and nutmeg in a small bowl and stir. Set aside.
- Serve the pudding warm, drizzled with melted butter and a generous sprinkling of the spiced sugar.
NORWEGIAN ROMMEGROT RECIPE
This Norwegian cream pudding is cheap to make and feeds a crowd. Serve warm or chilled with melted butter on top. Once you start cooking the mixture, butter starts to seep out. Remove this from the mixture and save for a topping.

Steps:
- Heat whipping cream in a heavy-bottomed kettle over medium heat, until it comes to a simmer. Whisk in about half of the flour, one tablespoon at a time. Try to whisk out any clumps of flour. As the mixture cooks, some butter will begin to seep out. Pour this butter into a dish and use when you are ready to serve. My batch yielded just over a tablespoon of butter.
- Whisk in the remaining flour. Slowly whisk in the warm milk. Whisk out any remaining lumps of flour. Add sugar. Cook for a few minutes, until pudding is thick.
- Serve warm or chilled, topped with cinnamon, sugar, and melted butter.

She was always begged by family and friends to PLEASE make this. It was, and still is, a staple at the holiday table for us.

NOODLE PUDDING
Noodles, which routinely find themselves saved as leftovers in the back of the refrigerator, can easily be converted into dessert. Milk, butter, cinnamon and eggs combine for the custard that surrounds the cooked pasta, and the whole dish is topped with raisins. If you don't like raisins, almost any dried fruit - cranberries or cherries, for example - would be a nice substitution.

Tips:
- Use fresh ingredients: The fresher the ingredients, the better the noodle pudding will taste. Use high-quality eggs, milk, and cream.
- Don't overcook the noodles: The noodles should be cooked al dente, or slightly firm to the bite. Overcooked noodles will make the pudding mushy.
- Use a variety of spices and seasonings: Don't be afraid to experiment with different spices and seasonings to add flavor to the pudding. Some popular choices include cinnamon, nutmeg, ginger, and cardamom.
- Let the pudding cool completely before serving: This will allow the flavors to meld and the pudding to set properly.
- Serve the pudding with your favorite toppings: Some popular choices include fresh berries, whipped cream, or ice cream.
Conclusion:
Norwegian noodle pudding is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be customized to your own taste. So next time you're looking for a new and exciting way to enjoy noodles, give this recipe a try.
