NORTHERN IRELAND POTATO SOUP

I actually got this recipe in my home-ec class in high school. My BF (and my ex-BF) loved this soup so much! It is perfect for cold fall days, and makes enough to warm up a family. So creamy! You can sub half and half for the heavy cream to save on calories, but the soup doesn't come out as thick so I just try to eat healthy the rest of the day to make up for it :)

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 14

2 teaspoons vegetable oil
2 cups leeks, chopped
2 stalks celery, diced
1 small onion, diced
2 cloves garlic, minced
4 medium potatoes, coarsely chopped
4 cups vegetable stock or 4 cups water
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried thyme
1 1/2 cups light cream
2 teaspoons fresh parsley, chopped
2 teaspoons fresh dill, chopped
2 teaspoons fresh tarragon, chopped

Steps:

  • In large pan, heat the oil and add the leeks, celery, onion and garlic.
  • Saute over medium heat, until the vegetables are soft.
  • Stir in the vegetable stock or water, potatoes, salt, pepper& thyme; bring to a boil.
  • Simmer over medium heat for 20 to 30 minutes, until the potatoes are easily pierced with a fork.
  • Add the cream and herbs and return to a light simmer, stirring occasionally.
  • Remove the soup from the heat and let sit a few minutes before serving.
  • Serve with warm bread.

Tips:

  • Use high-quality potatoes: Choose starchy potatoes, such as Russet or Yukon Gold, for a creamy and thick soup.
  • Don't overcook the potatoes: Boil the potatoes until they are tender but still hold their shape. Overcooked potatoes will make the soup gluey.
  • Use good quality stock: Use homemade chicken stock or vegetable stock for the best flavor. Avoid using store-bought stock cubes, which can be high in sodium and preservatives.
  • Add vegetables: Add your favorite vegetables to the soup, such as carrots, celery, onions, or leeks. This will add flavor and texture to the soup.
  • Season to taste: Season the soup with salt, pepper, and other herbs and spices to taste. Be careful not to over-season the soup.
  • Garnish before serving: Garnish the soup with fresh herbs, such as parsley, chives, or dill. This will add freshness and color to the soup.
