1 pound uncooked spaghetti
1/2 pound sliced fresh mushrooms
1 cup chopped onion
2 tablespoons olive oil
1/2 teaspoon minced garlic
3 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
3 cups cubed cooked turkey
1 cup chicken broth
1/3 cup sherry or additional chicken broth
1 teaspoon Italian seasoning
3/4 teaspoon pepper
2 cups grated Parmesan cheese, divided

Steps:

  • Preheat oven to 350°. Cook spaghetti according to package directions., Meanwhile, in a Dutch oven, saute mushrooms and onion in oil until tender. Add the garlic; cook 1 minute longer. Stir in the soup, turkey, broth, sherry, Italian seasoning, pepper and 1 cup cheese. Drain spaghetti; stir into turkey mixture., Transfer to 2 greased 8-in. square baking dishes. 3 cups uncooked penne (or medium pasta)
3 tablespoons butter
1 onion ( finely diced)
8 ounces mushrooms (sliced)
2 cloves garlic (minced)
10 ¾ ounces condensed cream of chicken soup
1 ⅓ cups milk
½ teaspoon seasoned salt
½ teaspoon dried basil
1 cup havarti cheese (or swiss cheese, shredded )
3 cups cooked turkey
¼ cup seasoned bread crumbs
2 tablespoons butter (melted)

Steps:

  • Heat oven to 375°F. Combine topping ingredients and set aside.
  • Cook pasta al dente according to package directions.
  • Cook onion, mushrooms, and garlic in butter until tender, about 5 minutes.

Just had another wonderful Thanksgiving dinner at our dear friends house yesterday and she sent us home with some left overs. My sweetie ate his all gone and said that we sould make this again when we either have chicken or ham left from a dinner. This is one recipe I'll keep on hand for sure.

Number Of Ingredients 14

1 Tbsp butter
3 to 4 c turkey, cut into 1/2 inch pieces
1 medium onion or 3 shallots, sliced
8 oz button mushrooms, halved or quartered
1 can(s) (14 1/2 ounce) diced tomatoes, undrained
2 Tbsp all purpose flour
1/2 tsp dried thyme leaves
cheese puff topping (recipe next)
1/2 c water
1/4 c 1/2 stick butter, cut up
1/4 tsp salt
1/2 c all purpose flour
2 eggs
2 oz sharp cheddar cheese, diced (a little over 1/2 cup)

Steps:

  • 1. Preheat your oven to 400 for cheese puffs.
  • 2. Meanwhile, melt butter in large skillet over medium heat and add turkey and onions.
  • 3. Cook until onions are clear; about 3 minutes and add mushrooms. Cook and stir for 5 minutes.
  • 4. Add tomatoes, flour and thyme and cook and stir until blended and bubbly.
  • 5. Lower heat and cover to keep warm.
  • 6. Cheese Puff Topping:
  • 7. Heat water, butter and salt in small saucepan over hight heat to a full rolling boil.
  • 8. Reduce heat and quickly stir in flour, mixing vigorously until mixture leaves sides of pan in a ball.
  • 9. Place flour mixture in mixer bowl with flat beater.
  • 10. Turn to speed 2 and add eggs, one at a time, mixing about 30 seconds after each addition.
  • 11. Stop and scrape bowl and turn mixer to speed 4 and beat about 15 seconds and add cheese.
  • 12. Turn mixer speed to sir and mix about 10 seconds and set aside.
  • 13. Pour the warm filling into a 2 quart casserole dish sprayed with non stick cooking spray.
  • 14. Spoon topping into 4 mounds on top of filling.
  • 15. Place in oven and bake for 35 to 45 minutes or until pastry is puffed and browned and filling is bubbly.
  • 16. Serve hot with your favorite salad.

1 tablespoon olive oil
1 cup chopped onion
1 tablespoon chopped garlic
1 cup long grain brown rice
1 (14 ounce) can chicken broth
1/4 cup water
1/4 teaspoon dried sage
4 teaspoons butter or 4 teaspoons margarine
1 lb shiitake mushrooms, stems removed or 1 lb white button mushrooms, sliced
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 cups diced cooked turkey (3/4 lb.)
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup dry white wine
1/4 cup chopped fresh parsley

Steps:

  • Heat oil in a medium saucepan over medium heat.
  • Add onions and cook 5 minutes, until softened.
  • Add garlic and cook 1 minute.
  • Stir in rice.
  • Slowly add chicken broth, water and sage.
