3 medium potatoes (1 1/2 lbs) peeled and diced into 1-in. pieces
1 lg onion, finely chopped
3 smoked ham hocks (about 1.5 lb)
2 TB dry dill weed
2 tsp grated lemon peel
1/4 tsp ground white pepper
2 c chicken broth
4 c milk (use low fat for low fat diets)

Steps:

  • In Crock Pot: place potatoes, onion, ham hocks, dill weed, lemon peel, pepper and broth. Cook on low setting for 6-8 hours. Remove ham hocks and pull off meat; discard bones, skin and cartilage. Scoop out half of potatoes and whirl in blender. Return meat and puree to pot and add milk. Cook on high for 20 minutes. Garnish with additional dill.

3 ½ cups peeled and diced potatoes
⅓ cup diced celery
⅓ cup finely chopped onion
¾ cup diced cooked ham
3 ¼ cups water
2 tablespoons chicken bouillon granules
½ teaspoon salt, or to taste
1 teaspoon ground white or black pepper, or to taste
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk

Steps:

  • Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.

1 ½ pounds Yukon Gold potatoes, peeled and diced
1 medium onion, diced
1 medium carrot, diced
1 rib celery, diced
8 ounces smoked ham, diced
3 cloves garlic, sliced
3 tablespoons butter
¼ cup flour
4 cups chicken broth
2 cups water
½ cup heavy cream
salt and pepper to taste
1 pinch cayenne pepper
1 tablespoon chopped fresh chives for garnish

Steps:

  • Melt butter in a stockpot over medium heat until golden brown. Stir in carrot, celery, onion, ham, and garlic; cook and stir for 5-6 minutes, until the vegetables soften and the onions are translucent.
