KEY LIME PIE

Key Lime Pie image

This is the frozen key lime pie that ends up all over Jack Nicholson's face in the film adaptation of the novel "Heartburn," Nora Ephron's thinly veiled recounting of her disastrous marriage to Carl Bernstein. It is very easy to make, and the large amount of key lime juice guarantees a tart, impressive flavor. We recommend eating it, though, not using it as a weapon.

Tips:

- To ensure the perfect balance of sweet and tangy, select ripe and juicy peaches. Look for peaches that are fragrant and have a slight give when gently pressed. - For a more intense peach flavor, use fresh peaches rather than frozen or canned. If using frozen peaches, thaw them completely before using and drain off any excess liquid. - If you don't have a pastry brush, you can use a spoon to spread the egg wash over the pie crust. Just be sure to evenly coat the entire surface. - If you're short on time, you can use a store-bought pie crust. Just be sure to pre-bake it according to the package directions. - To prevent the pie from boiling over, place a baking sheet underneath the pie plate before baking. - If you don't have a pie plate, you can use a 9-inch round baking pan. Just be sure to trim the excess pastry around the edges. - Serve the pie warm or at room temperature with a scoop of vanilla ice cream or whipped cream.
