Number Of Ingredients 8

2 cups of prepped and cubed nopales
½ a small white onion (about little more than ¼ cup, chopped)
2 large cloves of garlic (roughly chopped)
2 Roma tomatoes (chopped)
roughly chopped serrano pepper (to taste)
salt (to taste)
1.5 Tablespoons olive oil (or vegetable oil)
4 medium to large eggs (or as desired)

Steps:

  • In a large pan heat the oil then add the onion and saute until softened. Next, add the serrano and saute for 3 minutes while stirring constantly. Next, add the nopales and garlic and the salt (I used about ½ a teaspoon), and mix until well combined. Saute until the nopales have softened and released all of their viscous liquid, continue to cook until that liquid cooks off. Then add the tomatoes and cook for about 5 minutes. Stir to prevent burning. Then add the eggs and cook until the eggs are cooked to your desired texture.
  • Serve with warm tortillas on the side and if desired some refried beans, your favorite salsa, and avocado slices. You could also use it as a stuffing for gorditas or to make breakfast burritos. Enjoy!

Yield 4 serving(s)

Number Of Ingredients 10

1/2 lb bacon
1 medium onion, chopped
2 garlic cloves
1 (4 ounce) can green chilies, chopped
1 lb nopales (fresh cactus pads, cleaned of thorns and sliced into 1/4-inch strips)
1 teaspoon chili powder
1 large tomatoes, chopped
6 eggs, beaten
1 cup cheddar cheese, grated
salt

Steps:

  • Fry bacon and remove to drain.
  • Pour off most of the bacon drippings, leaving enough in the pan to sauté the onions and garlic.
  • When onions are transparent, add chilies, nopalitos, chili powder, and tomato.
  • Cook for five minutes and stir in eggs. When eggs are scrambled, top with grated cheese and bacon, and serve with tortillas, home-fried potatoes, and refried beans.

Tips:

  • Choose tender nopales: Select nopales that are thin and have a vibrant green color. Avoid those that are thick or have a brownish tint, as they may be tough and bitter.
  • Properly clean the nopales: Before cooking, remove the prickly pear spines from the nopales using a sharp knife or a vegetable peeler. Cut off both ends of the nopales, then slice them into thin strips.
  • Reduce the bitterness: To reduce the bitterness of nopales, soak them in cold water for at least 30 minutes before cooking. You can also boil them for a few minutes, then drain and rinse them thoroughly.
  • Experiment with different cooking methods: Nopales can be cooked in various ways, including boiling, sautéing, grilling, and roasting. Each method imparts a unique flavor and texture to the dish, so feel free to experiment to find your preferred cooking method.
  • Add complementary flavors: Nopales pair well with a variety of flavors, including garlic, onion, tomatoes, cilantro, and cheese. Feel free to add these ingredients to your nopales recipes to enhance their taste.

Conclusion:

Nopales, also known as prickly pear cactus, offer a unique and delicious addition to various dishes. Their slightly bitter flavor and crunchy texture add complexity and interest to a variety of recipes. Whether you're using them in salads, soups, stews, or as a side dish, nopales are a versatile and nutritious ingredient that deserves a place in your kitchen. So, next time you're looking for something new and exciting to cook, give nopales a try – you won't be disappointed!
