This casserole is of Austrian origin and was brought over by immigants before the turn of the last century. My mother made a simplified version of this recipe for the family (recipe#512343); but, for a special occasion, this recipe is an authentic version.

NOODLES WITH HAM (SCHINKENFLECKERLN)

Noodles With Ham (Schinkenfleckerln) image

The Austrians use noodles in the shape of little squares for this dish. If you wish to be completely authentic, you can break your raw noodles into 3/4-inch pieces, then cook them until tender.

Provided by Vicki Butts (lazyme)

Categories     Pork

Time 30m

Number Of Ingredients 7

1/3 c butter
1 medium onion, minced
3 c cooked ham, cubed
4 c medium egg noodles (8-oz), cooked
1/2 tsp salt
1/4 tsp pepper
1 tsp caraway seeds

Steps:

  • 1. Heat butter or margarine in large skillet. Sauté onion in it until soft and golden.
  • 2. Add ham and cook over low heat for 10 minutes, stirring occasionally.
  • 3. Add noodles, salt, pepper, and caraway seeds and toss together. Cook for 5 minutes, or until thoroughly heated through, stirring frequently.

Tips:

  • For the best results, use high-quality ingredients. Fresh ham, homemade chicken stock, and freshly grated Parmesan cheese will make a world of difference in the flavor of the dish.
  • Don't overcook the noodles. They should be cooked al dente, with a slight bite to them.
  • If you don't have homemade chicken stock, you can use store-bought chicken broth. However, be sure to choose a brand that is low in sodium.
  • Feel free to add other vegetables to the dish, such as peas, carrots, or celery.
  • Serve the noodles with a sprinkle of freshly grated Parmesan cheese and a side of crusty bread.

Conclusion:

Noodles with ham (Schinkenfleckerln) is a classic Austrian dish that is easy to make and always a hit with the family. It is a hearty and flavorful dish that is perfect for a weeknight meal or a special occasion. So next time you are looking for a quick and easy dinner idea, be sure to give this recipe a try.
