NOEL COOKIES
Our daughter simply adores these cookies. They are only ever made for Christmas, so that in itself makes them special. These freeze very well, so you can bake ahead and hide. Too bad I can't hide them from myself. :) I think this may have been a Robin Hood recipe from many years ago, but I'm not completely certain.

CHEWY NOELS
My mother used to make these at Christmas every year. After dusting them with powdered sugar she would pipe N-O-E-L in green icing on the tops of each one.

NOEL NUT BALLS
No holiday cookie tin would be complete without at least a few Noel nut balls, rich nut-and-butter domes, rolled in confectioners' sugar to resemble miniature snowballs. In Martha's family, the cookie dough was traditionally made with a touch of bourbon (or orange juice), for extra flavor.

Steps:
- Whisk together flour, pecans, confectioners' sugar, and salt in a medium bowl. With an electric mixer on medium-high speed, beat butter and honey until fluffy, about 3 minutes. Mix in bourbon or orange juice just to combine. Add flour mixture, and beat just to combine. Turn out dough onto a piece of plastic, wrap tightly, and chill 3 hours.
- Preheat oven to 350 degrees. Roll dough, 2 teaspoons at a time, into balls. Place 2 inches apart on parchment-lined baking sheets. Bake until brown around edges, about 12 minutes. Transfer cookies to wire racks; let cool completely. Roll in confectioners' sugar to coat. Cookies can be stored in an airtight container at room temperature up to 1 week.
Tips:
- Chill the dough before baking. This will help the cookies keep their shape and prevent them from spreading too much.
- Use a cookie scoop to drop the dough onto the baking sheet. This will help ensure that the cookies are all the same size and shape.
- Bake the cookies for the recommended amount of time, but watch them closely. Overbaking will make the cookies dry and crumbly.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This will help prevent the cookies from breaking.
- Store the cookies in an airtight container at room temperature for up to 3 days, or freeze them for up to 2 months.
Conclusion:
These Noel cookie gems are a delicious and festive treat that are perfect for Christmas. They are easy to make and can be enjoyed by people of all ages. With their simple ingredients and classic flavor, these cookies are sure to become a holiday favorite.
