This is a quick snack type cake that makes a good week night dessert with leftovers for lunchpails the next day. The recipe originally came from a Junior League cookbook from my area. I tinkered with the flavorings until it suited my family.

Number Of Ingredients 12

3 tablespoons butter
1 cup granulated sugar
1 egg, beaten
1 cup flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
3 cups apples, pared and diced
1/4 cup chopped nuts, walnuts or 1/4 cup pecans, work well
1 teaspoon vanilla
2 tablespoons granulated sugar

Steps:

  • Cream together butter and sugar, Add beaten egg to creamed mixture.
  • Mix together flour, soda, salt and spices.
  • Add dry ingredients to creamed mixture.
  • Stir in vanilla, nuts and apples, by hand.
  • This will seem dry at first but will loosen up as you mix.
  • Spread in greased and lightly floured 8"x8" pan, sprinkle remaining 2 tablespoons sugar over top of batter before placing in 350 degree oven.
  • Bake for 40-45 minutes.
  • No need to frost.
  • Serve warm with vanilla ice cream, or cooled as is.

Mom got this recipe from a friend at church in the 1990's. Its almost like eating an apple pie. Very good.

1 c sugar
2 Tbsp soft butter
1 beaten egg
3 c peeled and diced baking apples
1/4 c chopped nuts
1 tsp vanilla
1 c flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp each cinnamon and nutmeg

Steps:

  • 1. Preheat oven to 350 degrees. Cream together sugar and butter. Add beaten egg and mix well. Add diced apples, chopped nuts and vanilla. Sift together flour, baking soda, salt, cinnamon and nutmeg and stir into mixture. Place batter into 8 inch square greased pan. Bake at 350 degrees for 35 to 40 minutes.
  • 2. To serve scoop into bowl and serve with a big scoop of vanilla ice cream.

1 c sugar
1 c all purpose flour
1 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
3 c apples, chopped
1 egg, beaten
3 Tbsp melted butter
1 tsp vanilla extract
1/2 c chopped nuts (walnuts or pecans)
whipped topping or whipped cream

Steps:

  • 1. Sift first 5 ingredients into large bowl. Make well in center of mixture.
  • 2. Add remaining ingredients. Mix thoroghly and pour into a greased 9x9 inch pan. Bake at 350 degrees for 40 minutes. This cake will be very moist. Serve with whipped topping or whipped cream (optional).
  • 3. Note: You can double this recipe and bake it in a 13 x 9 inch pan. You may need to increase the baking time to ensure the middle of the cake is done.
