Made this for Thanksgiving when I had more pumpkin and cranberries than I needed. The walnut topping is optional but also one of my favorite parts.

2 cups canned pumpkin
1 cup skim milk
3/4 cup Splenda granular, sugar substitute
2 eggs
2 cups flour
1 tablespoon cinnamon
2 teaspoons pumpkin pie spice
1 teaspoon ground ginger
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 cups fresh cranberries, rinsed
1/2 cup walnuts, chopped
1/2 cup rolled oats
1 tablespoon margarine
1 teaspoon cinnamon
1 tablespoon Splenda granular, sugar substitute

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl stir together wet ingredients, combining the pumpkin, milk, splenda, and eggs.
  • In a separate bowl stir together dry ingredients, combining the flour, cinnamon, pumpkin pie spice, ginger, baking soda, baking powder, and salt.
  • Add the dry ingredients and cranberries to the wet mixture, stirring only until just combined. Be careful not to over mix the batter.
  • Pour batter into a greased loaf pan. Combine topping ingredients and sprinkle over the top of the pan. Pressing the topping down slightly will help it adhere to the bread.
  • Bake approximately 60 minutes or until a toothpick can be inserted and come out clean.

2 eggs, beaten
1 teaspoon vanilla extract
1/2 cup milk, 1%
1/2 cup applesauce, unsweetened
1 teaspoon vanilla liquid stevia
2 bananas, mashed
2 cups whole wheat pastry flour OR gluten free flour ( I used Bob's Red Mill)
1 tablespoon ground flaxseed
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon xanthan gum optional with whole wheat pastry flour
1 teaspoon cinnamon
2 1/2 teaspoons pumpkin pie spice
1 cup pumpkin puree

Steps:

  • 1.Preheat oven to 350 degrees. 2.In a stand mixer place eggs, vanilla, milk, applesauce and stevia and blend on speed 4 until combined. 3.Add bananas. 4.In a separate bowl stir together flour, flaxseed, salt, baking powder, baking soda, cinnamon, xanthum gum and pumpkin spice. 5.A little a time pour the dry ingredients into the wet ingredients and blend on all incorporated. 6.Blend in the pumpkin puree. 7.Spray a loaf pan with nonstick cooking spray and pour batter into pan. 8.Bake 60-70 minutes until a toothpick in center of loaf comes out clean. 9.Let cool 30-60 minutes before removing from loaf pan.

  • Use fresh pumpkin puree. This will give your bread the best flavor and texture. If you don't have fresh pumpkin puree, you can use canned pumpkin puree, but be sure to drain it well before using.
