Tips:

  • Use ripe, flavorful tomatoes. This is key to making a delicious dish. If you can, use fresh tomatoes from your garden or a local farmer's market. If you're using canned tomatoes, choose a high-quality brand and drain them well before using.
  • Don't overcrowd the pan. When browning the chicken, make sure to leave some space between the pieces so that they can cook evenly. If you overcrowd the pan, the chicken will steam instead of brown.
  • Use a heavy-bottomed pot or Dutch oven. This will help to evenly distribute the heat and prevent the chicken from sticking.
  • Season the chicken generously. Don't be afraid to use a lot of salt and pepper, as this will help to flavor the chicken throughout.
  • Don't peek! Once you've added the chicken to the pot, don't lift the lid until the time is up. This will help the chicken to cook evenly and prevent it from drying out.

Conclusion:

This no-peek tomato chicken is an easy and delicious weeknight meal that the whole family will love. It's made with simple ingredients that you probably already have on hand, and it comes together in just a few minutes. So next time you're looking for a quick and easy dinner idea, give this recipe a try. You won't be disappointed!
