Time 1h30m

Yield 8

Number Of Ingredients 19

2 large zucchini
1 tablespoon salt
1 pound ground beef
1 ½ teaspoons ground black pepper
1 small green bell pepper, diced
1 onion, diced
1 cup tomato paste
1 (16 ounce) can tomato sauce
¼ cup red wine
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh oregano
hot water as needed
1 egg
1 (15 ounce) container low-fat ricotta cheese
2 tablespoons chopped fresh parsley
1 (16 ounce) package frozen chopped spinach, thawed and drained
1 pound fresh mushrooms, sliced
8 ounces shredded mozzarella cheese
8 ounces grated Parmesan cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a deep 9x13 inch baking pan.
  • Slice zucchini lengthwise into very thin slices. Sprinkle slices lightly with salt; set aside to drain in a colander.
  • To prepare the meat sauce, cook and stir ground beef and black pepper in a large skillet over medium high heat for 5 minutes. Add in green pepper and onion; cook and stir until meat is no longer pink. Stir in tomato paste, tomato sauce, wine, basil, and oregano, adding a small amount of hot water if sauce is too thick. Bring to a boil; reduce heat and simmer sauce for about 20 minutes, stirring frequently.
  • Meanwhile, stir egg, ricotta, and parsley together in a bowl until well combined.
  • To assemble lasagna, spread 1/2 of the meat sauce into the bottom of prepared pan. Then layer 1/2 the zucchini slices, 1/2 the ricotta mixture, all of the spinach, followed by all of the mushrooms, then 1/2 the mozzarella cheese. Repeat by layering the remaining meat sauce, zucchini slices, ricotta mixture, and mozzarella. Spread Parmesan cheese evenly over the top; cover with foil.
  • Bake for 45 minutes. Remove foil; raise oven temperature to 350 degrees F (175 degrees C), and bake an additional 15 minutes. Let stand for 5 minutes before serving.

Time 1h20m

Number Of Ingredients 12

3 lb zucchini
2 lb ricotta cheese (low fat ok), (homemade ok, see recipe link below in comment section) or use your favorite purchased ricotta
4 large eggs, lightly beaten (egg beaters ok)
1/4 c fresh parsley, chopped
1/2 tsp basil, dried
1 tsp oregano, dried
1 tsp garlic powder
salt and freshly ground black pepper to taste
1 c parmesan cheese, grated (low fat ok)
1 c bread crumbs
1 jar(s) home made or purchased spaghetti sauce
1 lb shredded mozzarella cheese (low fat ok)

Steps:

  • 1. NOTE: You will need some extra seasonings when you use your favorite spaghetti sauce in this dish but feel free to use more or less to your own liking. Preheat oven to 350 degrees. Cut unpeeled zucchini into long slices about 1/4 to 1/3 inch thick. Cook in boiling water just until it begins to soften but not until it becomes limp, about 5 minutes. Drain on paper towels. Mix ricotta cheese, eggs, parsley, seasonings, 1/2 of the parmesan cheese, and 1/2 of the bread crumbs in a bowl. Set aside.
  • 2. In a 9 by 13 inch baking pan, spoon a layer of tomato sauce using a little less than 1/2 the sauce. Sprinkle 1/2 of the remaining bread crumbs over sauce. Arrange layer of 1/2 of the zucchini slices over bread crumbs. Spoon 1/2 of the reserved ricotta mixture on top of the zucchini. Sprinkle with 1/2 the mozzarella cheese. Arrange the rest of the zucchini over this, next layer remaining tomato sauce and then the remaining bread crumbs. Top with remaining ricotta mixture. Finally top with remaining mozzarella and parmesan cheeses.
  • 3. Bake in preheated oven for about 1 hour or until top is brown. Let stand 15 minutes before cutting.

Provided by Food Network

Time 1h30m

Yield 4 servings

Number Of Ingredients 16

3 medium zucchini, ends removed, sliced lengthwise
1 large portabella mushroom, sliced into strips
1 large eggplant, ends removed, sliced lengthwise
2 cups canned crushed tomatoes
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon Italian seasoning
1 (16-ounce) package frozen chopped spinach, thawed, thoroughly drained and patted dry
2 tablespoons fat-free liquid egg substitute
1 cup fat-free ricotta cheese
1 tablespoon chopped fresh basil
1/4 teaspoon salt
Dash ground nutmeg
1 cup ground-beef-style soy crumbles, thawed from frozen
1/2 cup shredded part-skim mozzarella cheese
1 tablespoon reduced-fat Parmesan-style grated topping

Steps:

  • Preheat oven to 425 degrees F.
  • Lay several paper towels next to the stove; as you cook the veggies, transfer them to the paper towels to drain excess moisture.
  • Bring a very large grill pan sprayed with nonstick spray to medium-high heat on the stove. Add zucchini, portabella mushroom, and eggplant, and cook until softened, about 2 minutes per side. Set aside.
  • In a large bowl, combine crushed tomatoes with garlic powder, onion powder, and Italian seasoning. Mix well and set aside.
  • In another large bowl, combine spinach, egg substitute, ricotta cheese, basil, salt, and nutmeg. Mix thoroughly and set aside.
  • Evenly coat the bottom of an 8-inch by 8-inch pan with about half of the seasoned crushed tomatoes. Evenly layer half of the sliced veggies over the tomatoes. Spread half of the spinach mixture into an even layer over the veggies. Top evenly with soy crumbles.
  • Evenly layer remaining veggies into the pan, placing them perpendicular to the first layer, followed by the remaining spinach mixture. Evenly cover with remaining seasoned crushed tomatoes. Evenly distribute mozzarella cheese and grated topping over the crushed tomatoes.
  • Bake in the oven until lasagna is hot and mozzarella cheese is golden brown, about 30 minutes.
  • Allow to cool slightly, cut into quarters, and enjoy!

Tips:

  • Choose fresh, high-quality vegetables. This will make a big difference in the taste of your lasagna.
  • Slice your vegetables evenly. This will help them cook evenly.
  • Don't overcrowd the lasagna pan. This will prevent the vegetables from cooking properly.
  • Bake the lasagna until the cheese is melted and bubbly. This will ensure that the lasagna is cooked through.
  • Let the lasagna cool for a few minutes before serving. This will help it set.

Conclusion:

This no-pasta vegetable lasagna is a delicious and healthy alternative to traditional lasagna. It's easy to make and can be tailored to your own preferences. Whether you're a vegetarian or just looking for a healthier option, this lasagna is sure to please.
