This is a scrumptious taco dip. When I use all low-fat ingredients, such as low-fat sour cream and low-fat Cheddar, it still comes out so delicious! Serve with baked tortilla chips for dipping.

Steps:
- Mix as much taco seasoning as your taste allows in with the cottage cheese.
- i find the entire package is much to salty.
- Spread on a small serving platter or 9" pie plate.
- Cover entire surface with lettuce, then cheese, onions and tomatoes.
- Use tortilia chips for scooping.
- Serve right away as the lettuce will go limp if left too long.
- This recipe can be doubled to suit your party needs.
B'S TACO DIP (MEATLESS)
I honestly believe that this dip is the reason I get invited to get-togethers. It is extremely versatile - you can add just about any veggies you want. I've added olives (not my fave, just cuz I don't like them), jalapenos, and cilantro (delicious if you like it!) and avocado all to rave reviews. By the time you've made it once, you will easily be able to take liberties to adjust it to your taste. Enjoy! Comment with any feedback or tweeking you may have done! Served with tortilla chips. My rule of thumb is one bag of chips per pan.

Steps:
- In a medium bowl, microwave cream cheese just to soften.
- Add sour cream and taco seasoning mix to softened cream cheese. Blend the mixture well and try to get out all the lumps. Using an electric mixer makes it a much easier task, but I usually just stir it manually.
- Spread mixture into the bottom of an inch-deep baking sheet.
- Pour taco sauce over the top, spreading it lightly with the bottom of a spoon to cover entire mixture.
- Top with remaining ingredients. The order I use is: lettuce, tomato, onion, then cheese. Of course, you can do what you want but it looks really nice when the cheese is on the very top.
TACO DIP
This version of a game-day favorite, taco dip, is super simple to make. Even easier, make the beef-and-bean mixture a day ahead, then just reheat and top.

Steps:
- Heat the oil in a large skillet over medium-high heat. Add the beef, and cook, stirring occasionally, until completely browned, 8 to 10 minutes. Pour off the excess grease, add the taco seasoning and stir until the beef is well coated. Add the tomato paste, and stir until it darkens to a dull brick red, about 30 seconds. Add 3/4 cup water, bring to a simmer and cook and until the mixture thickens, 2 to 3 minutes. Add the beans, and stir just to warm them through. Remove from the heat, and transfer to an 8-inch square baking dish.
- Top the beef-and-bean mixture with an even layer of sour cream, then a layer of Cheddar. Sprinkle the tomatoes, lettuce and black olives and jalapeno if using on top. Serve with tortilla chips.

Tips:
- Use ripe avocados: Ripe avocados are creamier and have a better flavor. To check if an avocado is ripe, gently squeeze it. It should yield to gentle pressure.
- Season the avocado mixture well: Don't be afraid to add plenty of salt, pepper, and lime juice to the avocado mixture. This will help to brighten the flavors and make the dip more flavorful.
- Use a variety of toppings: The beauty of taco dip is that you can customize it to your liking. Some popular toppings include salsa, guacamole, sour cream, diced tomatoes, and shredded cheese.
- Serve with chips or vegetables: Taco dip is traditionally served with tortilla chips, but you can also serve it with vegetables, such as carrots, celery, or bell peppers.
- Make it ahead of time: Taco dip can be made ahead of time and stored in the refrigerator for up to 3 days. This makes it a great option for parties or potlucks.
