TANGY TEXAS SALSA

Tangy Texas Salsa image

I'm a "transplant" from Wisconsin currently living in Texas. Even after 20 years, I can't get enough of our wonderful local citrus. This is one way to work it into a main dish. The combination of tangy fruit, spicy jalapeno and distinctive cilantro is perfect over any meat, poultry or fish. We also dip into it with chips. -Lois Kildahl, McAllen, Texas

Tips:

  • Use fresh, ripe tomatoes: The quality of your tomatoes will make a big difference in the flavor of your salsa. Choose tomatoes that are firm and have a deep red color.
  • Roast your tomatoes: Roasting the tomatoes before you make the salsa will give it a smoky, caramelized flavor. You can roast the tomatoes in the oven or on the grill.
  • Use a variety of peppers: The type of peppers you use will determine the heat level of your salsa. For a mild salsa, use green bell peppers. For a medium salsa, use poblano or Anaheim peppers. For a hot salsa, use jalapeños or habaneros.
  • Add some onions and garlic: Onions and garlic add flavor and depth to salsa. Use white or yellow onions, and mince them finely. Use fresh garlic cloves, and mince them or press them through a garlic press.
  • Season your salsa with lime juice, cilantro, and salt: Lime juice adds brightness and acidity to salsa. Cilantro adds a fresh, herby flavor. Salt helps to balance out the flavors of the other ingredients.
  • Let your salsa sit for a while before serving: This will allow the flavors to meld together. You can make salsa ahead of time and let it sit in the refrigerator overnight for the best flavor.

Conclusion:

No-joke Texas salsa is a delicious, versatile condiment that can be used on tacos, burritos, nachos, and more. It's also a great way to use up fresh tomatoes and peppers. With its smoky, spicy, and tangy flavor, this salsa is sure to please everyone at your next party or gathering.
