Yield Makes 3 (1/3 pound) hamburgers

1 pound (450 grams) ground beef chuck or round
Salt and fresh ground black pepper
Butter, as needed

Steps:

  • Take the beef out of the refrigerator and allow it to sit at room temperature for about 5 minutes before forming the patties. Form beef into three 5 to 6 ounce hamburger patties. Use your thumb to imprint a dimple into the middle of each burger. (This prevents the middle of the burgers from puffing up while cooking). Season both sides of the hamburgers with salt and pepper.
  • Melt 1 tablespoon of butter in a cast iron pan over medium heat. Cook hamburger patties 3 to 4 minutes on each side, depending on how well done you like it.

Number Of Ingredients 10

2 cups cooked ham, shredded and chopped fine
1/3 cup finely chopped white onion
1 teaspoon ground black pepper
1 teaspoon garlic powder
1/2 cup sharp cheddar cheese, shredded
1 large egg, slightly beaten
1/4 cup self-rising flour
1/4 cup cornmeal (I like to use yellow)
1/8 cup mayonnaise
oil (for frying)

Steps:

  • Combine all ingredients except oil, in a medium sized bowl (mixture will be stiff).
  • Heat oil over medium heat, in a non-stick skillet large enough to fry all patties at one time (may do 2 patties at a time to turn more easily).
  • While oil is heating, form mixture into 4 patties.
  • Fry until golden brown, about 6 minutes on each side.
  • Serve warm and enjoy!

8 T. dry bread crumbs, divided
1-1/2 t *Drier's* mustard
10 oz. *Drier's* ham,ground
3 T. butter

Steps:

  • In a large bowl, combine the egg, milk, pickle relish, 6 T. bread crumbs and mustard. Crumble ham over mixture and miz well. Shape into four patties. Sprinkle each side with remaining bread crumbs. In a large skillet, cook patties over med. heat in butter for 4 to 5 min on each side or until a meat thermometer reaches 160.
