Steps:
- Add milk, cream, sugar and salt to a saucepan over medium heat. Bring to a simmer, then stir in tapioca and reduce heat to low. Cook, stirring often, until mixture has slightly thickened, and the tapioca pearls have plumped and softened, about 45 minutes.
- Add the eggs to a bowl and whisk to combine.
- Add a spoonful of hot tapioca mixture to the beaten eggs, stirring well as you pour it in. Repeat with another few spoonfuls of hot tapioca, stirring after each. (This helps temper the eggs and bring them to a warm temperature without "scrambling" them.)
- Add tempered egg mixture to the saucepan with tapioca and stir well to combine. Cook for 2-5 more minutes, just until thickened (keep in mind it will continue to thicken as it cools). Remove from heat and stir in vanilla.
- Transfer to a serving bowl and place a piece of plastic wrap directly on the surface of the pudding (to keep it from forming a rubbery skin on the surface). Allow it to cool before serving. Serve either warm or chilled.

Tips:
- Use the right tapioca pearls: Small or medium-sized pearls are best for this recipe. Large pearls will take longer to cook and may not get fully cooked through.
- Soak the tapioca pearls before cooking: This will help them to cook more evenly and prevent them from sticking together.
- Cook the tapioca pearls in plenty of water: The pearls will absorb a lot of water as they cook, so make sure to use enough water to cover them by at least 2 inches.
- Bring the water to a boil, then reduce the heat to low: This will help to prevent the pearls from sticking to the bottom of the pot.
- Cook the tapioca pearls until they are translucent: This should take about 30 minutes. You can test the pearls by biting into one. If it is still hard, it needs to cook longer.
- Add the tapioca pearls to the milk mixture: Once the pearls are cooked, add them to the milk mixture and bring to a simmer. Cook for 5 minutes, or until the pudding has thickened.
- Serve the pudding warm or chilled: Tapioca pudding can be served warm or chilled. If you are serving it chilled, be sure to let it cool completely before refrigerating.
Conclusion:
Tapioca pudding is a delicious and easy-to-make dessert that can be enjoyed by people of all ages. It is a good source of carbohydrates and calcium, and it can be made with a variety of different flavors. With these tips, you can make the perfect tapioca pudding every time.
