I made 2 of these at my in-laws for dessert after lunch. My mother-in-law requested that I make 3 more for after dinner. Then she asked me for the recipe.

Provided by Andra Kubala

Categories     Pies

Time 55m

Number Of Ingredients 9

1/4 c butter
1/2 20 oz can(s) crushed pineapples, drained
1 c pineapple juice, from draining the can
1 c milk
1 tsp salt
1 Tbsp vanilla
4 eggs
3/4 c sugar
1/2 c flour

Steps:

  • 1. ***If your pineapple juice doesn't equal 1 cup then make up the difference by adding milk.
  • 2. Preheat oven to 350 degrees. Butter deep dish pie pan.
  • 3. Throw everything into a blender and blend for 45 seconds on high. If you like coconut it is a perfect addition add half a cup before blending.
  • 4. Pour into buttered pie pan. If you added coconut, sprinkle a little on the top.

Tips:

  • Use fresh pineapple: Fresh pineapple has a much better flavor than canned pineapple. You can also use frozen pineapple, but be sure to thaw it completely before using it.
  • Choose a ripe pineapple: A ripe pineapple will be yellow-orange in color and have a sweet smell. Avoid pineapples that are green or have brown spots.
  • Cut the pineapple into small pieces: This will help the pineapple cook evenly.
  • Use a sharp knife to cut the pineapple: This will help you avoid crushing the fruit.
  • Don't overcook the pineapple: Overcooked pineapple will be tough and chewy.
  • Serve the pie warm or cold: No-crust pineapple pie is delicious either way.

Conclusion:

No-crust pineapple pie is a delicious and easy-to-make dessert. It's perfect for any occasion, from casual gatherings to special celebrations.
