NO CRUST MINI SPINACH QUICHES
This is an adaptation of Sackville's Spinach, Tomato and Feta Quiche. I'm doing low carb and wanted to leave out the crust and make into muffins to go. I changed it up a little and wanted to get the nutrition facts.

Tips:
- Use fresh spinach: Fresh spinach leaves yield the best flavor and texture in these quiches. If using frozen spinach, thaw it completely and squeeze out any excess moisture before using.
- Don't overcook the spinach: Wilting the spinach for just a few minutes is enough to soften it without losing its vibrant green color and nutrients.
- Use a good quality cheese: The cheese is one of the main ingredients in these quiches, so it's important to use a good quality one that melts well. Cheddar, Swiss, and Parmesan are all good choices.
- Season the quiche well: Don't be afraid to season the quiche well with salt and pepper. This will help to bring out the flavors of the other ingredients.
- Bake the quiche until it is set: The quiche is done baking when a toothpick inserted into the center comes out clean. Be careful not to overbake it, or the quiche will become dry and crumbly.
- Let the quiche cool slightly before serving: This will allow the quiche to set and make it easier to slice.
Conclusion:
These no-crust mini spinach quiches are a delicious and easy-to-make breakfast, lunch, or dinner option. They are perfect for meal prep, as they can be made ahead of time and reheated when you're ready to eat. With their creamy filling and flaky crust, these quiches are sure to be a hit with everyone who tries them.
