Sweet and tangy, great on ribs, steaks, chicken, you name it! The only time it takes to make this is the time to find the ingredients and mix them into a bowl. This recipe was in its original form one of Emeril's barbecue sauces as seen on his TV show. It's since been tweaked, perhaps not to perfection, but to my & my family's taste.

1 cup ketchup
1 cup apple cider vinegar
3 tablespoons brown sugar
2 tablespoons steak sauce
1 tablespoon Dijon mustard
1 teaspoon black pepper

Steps:

1/4 lb extra lean ground beef
4 saltine crackers
1/4 tsp dill
1/8 tsp each garlic powder, onion powder and black pepper
1 tsp light brown sugar
horseradish cheese
just a dash of liquid smoke
bbq sauce
bacon
1 medium yellow onion

Steps:

  • 1. Preheat oven to 425
  • 2. The onion ... get one that is about 2" to 3". If you get them any larger you will run into problems cooking the meat all the way through.
  • 3. Peel your onion and the slice it roughly in half so it is about 1-1/2" tall. Separate the rings so you have little cups and set aside.
  • 4. Take the extra onion and finely dice about a tablespoon of it and set aside.
  • 5. Place your meat into a small bowl and add the crushed crackers, dill, garlic powder, onion powder, pepper, brown sugar and the diced onion and mix it all together.
  • 6. At this point you need to add a little moisture so squeeze some BBQ sauce over all. Add the liquid smoke and then mix. The amount of BBQ sauce you add is totally dependent upon your personal preference. I usually add only about a tablespoon to start and then a touch more if needed so the mixture isn't too dense and dry.
  • 7. Cut your horseradish cheese into cubes. Take a small amount of the meat mixture in your hand and form a ball. Put a cheese cube into the ball and seal. Press the meat into one of the onion cups.
  • 8. Take a piece of bacon and cut it in half. Using a toothpick, secure the piece of bacon over the top of your onion. I like to cross both pieces over the top of ours.
  • 9. Place the completed onion cup into a greased baking dish that allows some room between the cups. Drizzle BBQ sauce over the top and then bake for about 35 minutes or until you achieve the desired doneness for your ground meat.
  • 10. Remove the toothpicks before serving.
  • 11. NOTES: These are super delicious done on the grill. These would be awesome appetizers made with smaller onions. You can use any type of cheese in these that you like .. we prefer something with a little punch so we use the horseradish cheese.
