1 teaspoon fresh thyme
½ teaspoon salt
¼ teaspoon pepper
1 cup grated cheddar cheese
¾ cup panko breadcrumbs
2 tablespoon butter, melted
1 teaspoon garlic salt

Steps:

  • Preheat your oven to 350 degrees F. Lightly grease or spray a 2-quart casserole dish or 9x13-inch baking pan with non-stick cooking spray.
  • Wash and thinly slice the yellow squash. Place the slices into a large mixing bowl.

35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter

NOTE This is a recipe that I do by taste so do not feel confined by these measurements i.e. add more squash for leftovers, if you want it cheesier add more cheese, you can't go wrong. Also, I use 1 bag of Pre-Shredded Mexican Cheese Mix, but any mild cheese (Mild Cheddar, Jack, American) should work.

My mother gave me the cookbook that this recipe was in. It is called "How To Boil Water". It was published locally, in Louisville, Ky. in 1972. I married a year later. I guess she figured, I needed some help. Tweaked.

2 lb small yellow squash
1 c chopped onion
1/4 c light butter
1/4 c 2% milk
2 eggs
salt to taste
pepper to taste
1/2 c cracker crumbs
melted butter

Steps:

  • 1. Wash, don't peel squash. Cut into small pieces and cook, until tender in a small amount of salted water.
  • 2. Drain and pour squash into a buttered baking dish. Immediately add butter, salt, pepper, and onion.
  • 3. Combine milk, eggs and mix with the squash.
