This peanut butter cookie recipe is great because there are no carbs! Since I have been on South Beach diet I have craved a little sweet at night and these fit the bill very nicely and fit in with my plan. The crumble VERY easily so let them cool a bit before taking off the cookie sheet.

1 c natural peanut butter (or your choice)
1 large egg
1/2 c splenda
dash vanilla (optional)

Steps:

  • 1. Preheat oven to 350.
  • 2. Mix all the ingredients together. You can add or decrease the Splenda to your own taste.
  • 3. Break off about 12 pieces and roll into a ball the place on a cookie sheet sprayed with Pam. Press down with a fork in the familiar fork patern.
  • 4. Bake for about 10 minutes or until they have stiffened up. Its kind of hard to tell but they will be firm to the touch. Cool then take off the cookie sheet and enjoy. Not your normal cookies but it fills a void. :-D

1/2 teaspoon baking soda
1/2 teaspoon vanilla essence

  • Preheat oven to 350F (180°C) and line a cookie tray with baking paper. Set aside.
  • Add the erythritol to a Nutribullet or blender and blend until powdered. Set aside. If using a confectioner's low-carb sweetener, you can skip this step.
  • Add all of the ingredients into a medium mixing bowl and mix until a smooth, glossy dough forms.
  • Roll about 2 tbsp of dough between your palms to form a ball, then place on the prepared cookie tray. Repeat until all dough has been used. You should end up with 12-14 cookies.
