Tips:
- Make sure the cream cheese is at room temperature before starting. This will help it mix smoothly with the other ingredients.
- If you don't have a springform pan, you can use a 9-inch round cake pan. Just be sure to line the bottom with parchment paper so the cheesecake doesn't stick.
- To make the ladyfinger cookies easier to dip, you can break them in half or thirds.
- If you don't have espresso powder, you can use instant coffee. Just dissolve it in a little bit of hot water before adding it to the cheesecake mixture.
- If you want a more intense coffee flavor, you can add more espresso powder or instant coffee to the cheesecake mixture.
- The cheesecake can be stored in the refrigerator for up to 3 days. You can also freeze it for up to 2 months. Just be sure to thaw it in the refrigerator overnight before serving.
