Categories     Bar Cookie

Time 37m

Yield 20 bars

Number Of Ingredients 12

1 cup all-purpose flour
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
1 teaspoon vanilla extract
1 large egg
1/2 cup butter, melted and cooled
2 cups quick-cooking oats (not instant)
1 1/2 cups raisins

Steps:

  • Preheat oven to 350°F Line an 8×8-inch baking pan with parchment paper (optional, but aids in getting cookies out of pan).
  • Whisk together flour, sugar, brown sugar, baking soda, salt and spices in a large bowl.
  • Make a well in the center of the flour mixture and stir in vanilla, egg and melted butter until smooth. Stir in oats and raisins until they are evenly distributed.
  • Pour dough into prepared pan and spread into a even layer with a spatula or your fingers. Bake for 22-26 minutes, or until bars are set and the center no longer looks wet. Edges will be golden brown. Cool pan on a wire rack before slicing. Cut into rectangular bars to serve.

Tips:

  • Ensure the butter is softened to room temperature before creaming it with the sugar. This will help create a smooth and creamy mixture.
  • Use a large mixing bowl to combine the ingredients. This will give you enough space to stir everything together easily.
  • Press the mixture firmly into the bottom of the pan. This will help prevent the bars from crumbling when you cut them.
  • Chill the bars for at least 2 hours before cutting them. This will help them set and make them easier to handle.
  • Store the bars in an airtight container in the refrigerator for up to 3 days.

Conclusion:

No-bake raisin bars are a delicious and easy-to-make treat that is perfect for any occasion. They are made with simple ingredients that you probably already have on hand, and they can be ready to eat in just a few hours. These bars are also a great way to use up leftover raisins.
