1 stick butter, softened
1 c sugar
1 c brown sugar
1 large egg
1 tsp vanilla extract
1 c pumpkin
1 c oatmeal, uncooked
1 tsp baking powder
1 tsp cinnamon
1 tsp pumpkin pie spice*
1/2 tsp salt
1 c raisins
2 1/2 c all purpose flour

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Cream butter and sugars. Add egg, vanilla, and pumpkin.

  • 5. Drop cookies by heaping tsp. onto greased cookie sheet or one covered with parchment paper (I HIGHLY recommend this!).
  • 6. Bake 12 to 15 minutes or until slightly browned around the edges. Move to cooling rack immediately.

Tips:

  • Use fresh, ripe pumpkin puree for the best flavor. You can make your own pumpkin puree by roasting a pumpkin and then pureeing it, or you can use canned pumpkin puree.
  • If you don't have raisins, you can substitute another dried fruit, such as cranberries, cherries, or apricots.
  • Be sure to press the mixture firmly into the pan so that the cookies hold together well.
  • Chill the cookies for at least 30 minutes before serving so that they have a chance to set.
