EXTRA RICH CHOCOLATE PEANUT BUTTER OATMEAL NO BAKE COOKIES

Extra Rich Chocolate Peanut Butter Oatmeal No Bake Cookies image

With all the variations on RecipeZaar I was surprised when I didn't find this one that a friend gave me a few years ago. Its got more peanut butter and more cocoa powder than most other variations so its extra rich in taste. I have used either old-fashioned or quick oatmeal successfully. "Cooking" time is the time required for the cookies to set completely.

Time 35m

Yield 24

Number Of Ingredients 6

2 cups white sugar
½ cup milk
½ cup butter
⅔ cup creamy peanut butter
1 teaspoon vanilla extract
3 cups quick-cooking oats

Steps:

  • Combine sugar, milk, and butter in a large saucepan; bring to a boil. Cook at a boil, stirring constantly, for 2 minutes. Remove saucepan from heat.
  • Stir peanut butter and vanilla extract into sugar mixture until smooth; fold in oats until well blended. Drop mixture by spoonfuls onto aluminum foil or waxed paper. Cool until cookies are set.

Nutrition Facts : Calories 182 calories, Carbohydrate 25.2 g, Cholesterol 10.6 mg, Fat 8.2 g, Fiber 1.5 g, Protein 3.3 g, SaturatedFat 3.4 g, Sodium 62.8 mg, Sugar 17.7 g

Tips:

  • Use old-fashioned oats. Quick oats will not provide the same texture and flavor as old-fashioned oats.
  • Don't overcook the oats. Oats should be cooked until they are tender but still have a slight chew to them.
  • Use creamy peanut butter. Crunchy peanut butter will not blend as well with the other ingredients and will make the cookies more difficult to handle.
  • Chill the dough before shaping. Chilling the dough will make it easier to work with and will help the cookies hold their shape.
  • Don't overbake the cookies. Cookies should be baked until they are just set. Overbaking will make them dry and crumbly.

Conclusion:

These no-bake chocolate peanut butter oatmeal cookies are a delicious and easy treat that can be enjoyed by people of all ages. They are perfect for a quick snack or dessert, and they can also be made ahead of time and stored in the refrigerator or freezer. With their combination of chocolate, peanut butter, and oats, these cookies are sure to be a hit with everyone who tries them.
