I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

2 tablespoons peanut butter, plain or crunchy
6 ounces Chinese or chow mein noodles

1/2 c packed brown sugar
1/4 c corn syrup
1/4 c heavy cream
2 Tbsp butter
1 tsp vanilla extract
1/2 tsp nutmeg

Steps:

  • 1. Put cereal in large bowl. Combine brown sugar,corn syrup,heavy cream and butter in saucepan. Bring to a simmer over medium high heat. Then reduce heat to medium and whisk until smooth.
  • 2. Continue cooking whisk occasionally. Until the mixture thickens and pulls away from the sides of pan.5-6 minutes.
  • 3. Remove from heat and whisk in vanilla,nutmeg and pinch of salt.
  • 4. Pour caramel over cereal and stir with rubber spatula.
  • 5. Scoop heaping tablespoons of cereal mixture onto ungreased cookie sheet. Let cool slightly then use fingers to form each into a mound shape. Sprinkle with sprinles or coconut if you want.
