HAYSTACKS
I have made these cookies for my family for about 30 years now. My son (who is now 36 years old) gets so excited when I make these; he always enjoys them with a tall glass of milk. I find that I have to be careful when melting the butterscotch because it seems to scorch easily, so take care - this is an essential ingredient! Also, these are best enjoyed in the winter because they seem to melt and not taste as great in the warmer weather.

NO BAKE CEREAL COOKIES
Currently I am obsessed with no bake cookies. #34401 are some of my favorites, but I was looking for ones without chocolate and came across this recipe in my "More With Less" cookbook. Really easy and fast and taste quite wonderful. My child who hates coconut even liked them!

Steps:
- In a large pan mix the brown sugar and the syrup.
- When it starts to boil add the vanilla and the peanut butter, stirring well.
- Take it off the heat and add the cereal and coconut. Mix well and drop by teaspoonfuls onto a cookie sheet you have sprayed with non stick spray.

Tips:

- Get creative with your toppings: You can use different types of cereal, marshmallows, and peanut butter to create different flavor combinations. You can also add other toppings, such as chocolate chips, nuts, or dried fruit.
- Make haystacks ahead of time: Haystacks can be made up to 2 days ahead of time. Store them in an airtight container in the refrigerator.
Conclusion:
No-bake cereal haystacks are a delicious and easy-to-make treat that is perfect for any occasion. They are a great way to use up leftover cereal and marshmallows, and they can be customized to your liking. With just a few simple ingredients, you can create a sweet and satisfying snack that the whole family will enjoy.
